Red Velvet Dessert Cups with Homemade Whipped Cream!
Ingredients
- 2 ½ cups all-purpose flour
- 1 ½ cups sugar
- 1 teaspoon baking soda
- 1 teaspoon fine salt
- 1 teaspoon cocoa powder
- 2 large eggs
- 1 1/2 cups vegetable oil
- 1 cup buttermilk
- 2 tablespoons red food coloring
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla extract
WHIPPED CREAM INGREDIENTS
- 3 cups heavy cream
- 1 ½ cups sugar
- 1 ½ tablespoons vanilla extract
Instructions
- Preheat the oven to 350-degrees F.
- Grease an 11 x 13 baking pan and set aside.
- In a large bowl, sift together the dry ingredients. Set aside.
- In the bowl of an electric mixer, beat the eggs. Add in the remaining wet ingredients and mix to combine.
- Add the dry ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared pan and bake about 30 minutes until a toothpick inserted in the center comes out clean.
- Let rest until cool. Cut the cooled cake into small cubes.
- In pretty glasses, assemble the dessert cups as follows:
- Spoon in whipped cream at the bottom, top with a layer of the cake cubes. Finish with another dollop of whipped cream, and a bit of cake crumbs.
- Alternatively, you can also assemble this in a large trifle bowl instead of individual cups if desired. This will make about 10-15 dessert cups depending on the size of the glasses.
- Store dessert cups in the refrigerator until ready to serve.
WHIPPED CREAM DIRECTIONS
- In an electric mixer on low, combine the cream, sugar and vanilla.
- Once combined, increase the speed of the mixer and beat until stiff peaks form.
- Refrigerate leftover whipped cream (if any).
- ENJOY!
