Pineapple Loaf Cake with Pineapple Glaze

Ingredients

Difficulty: Easy

    Prep time: 15 minutes

      Bake time: 1 ½ hours

        Servings: 10 slices

          Bread:

          • 1 c sugar
          • ½ c butter room temperature
          • 2 Tbs shortening
          • 2 eggs + 1 yolk
          • 1/3 c pineapple juice
          • 1 tsp vanilla
          • 1 tsp pineapple flavor
          • 1 3/4 c flour
          • 1 ½ tsp baking powder
          • ½ tsp baking soda
          • ½ tsp salt
          • 1 can crushed pineapple
          • 1 c chopped pineapple

          Glaze:

          • 1 c powdered sugar
          • ½ tsp vanilla
          • 1/2 tsp pineapple juice
          • 1-2 Tbs milk

          Instructions

          • Preheat the oven to 350F & Line a loaf pan with parchment paper for easy removal later on.
          • Spray the pan with baking spray and set aside.

          To make the bread batter

          • start by adding the sugar, butter and shortening to the bowl of a stand mixer fitted with a paddle attachment.
          • Beat together on high speed for 2 minutes or until fluffy and lighter in color.
          • Next, add in the eggs and beat together for 30 seconds.
          • Add in the pineapple juice, vanilla and pineapple flavor.
          • Mix together until combined.
          • Add in the flour, baking powder, baking soda and salt and mix just until combined.
          • Fold in the crushed pineapple with the juice and the chopped pineapple.

          The batter will be somewhat runny at this point.

          • Pour the batter into the prepared loaf pan.
          • Place the pan into the oven to bake for 1 ½ hours or until a toothpick inserted comes out clean or with slightly moist crumbs.
          • Once baked, remove from the oven and place on a cooling rack to cool for at least 20 minutes.

          To make the glaze

          • whisk the ingredients together in a medium sized bowl until smooth.
          • Pour the glaze onto the loaf and let cool completely before slicing and serving.
