Blueberry Crumb Bars

Blueberry crumb bars are a delicious blueberry bar that is topped with a crumble that is perfectly sweet. The ultimate fruit dessert you can make all year round.

Ingredients

  • 3 cups all-purpose flour
  • ½ cup white granulated sugar
  • ½ cup light brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup salted butter cold
  • 1 large egg
  • 2 ½ cups frozen blueberries thawed
  • 1 teaspoon vanilla extract
  • ¼ cup lemon juice
  • 1 tablespoon cornstarch

Instructions

  • Preheat your oven to 375°F.
  • Whisk together the flour, sugars, baking soda, and baking powder in a large mixing bowl.
  • Cut the butter into small cubes and use a pastry cutter to work the butter into the dry ingredients until the butter is broken down into pea-sized pieces.
  • Add the egg to the mixing bowl. Use the pastry cutter or your hands to work it in until it’s incorporated with the rest of the dough.
  • Press about 3/4 of the dough into the bottom of a 9x13 inch baking dish to form a crust. Set aside.
  • In a medium sized bowl, stir together the blueberries, lemon juice, vanilla, and cornstarch. Pour the blueberry mixture into the pan and sprinkle the remaining crumb mixture on top.
  • Bake your crumb bars for 40 minutes. Let the bars cool on the counter for about 20 minutes before slicing. Serve and enjoy!
