Ingredients

  • 1 9- inch pie crust
  • ½ cup salted butter melted and still warm
  • 1 ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs lightly beaten
  • 1/3 cup unsweetened cocoa powder
  • 1 cup chocolate chips
  • ¼ cup all-purpose flour

Instructions

  • Preheat oven to 375 degrees and prepare the pie crust by lining it along the bottom of a 9-inch pie dish. Crimp the edges as desired. Use a fork to poke holes in the sides and along the bottom of the pie.
  • Place a sheet of parchment paper over the crust and fill with pie weights or dry beans. Bake for 10 minutes or until the edges are golden brown. Remove the weights from the crust and continue to bake for an additional 5 minutes or until the bottom is golden brown. Set aside.
  • Reduce oven temperature to 350 degrees.
  • In a medium bowl, whisk the melted butter, sugar, and vanilla until well combined.
  • Whisk in the eggs until well combined.
  • Add the cocoa powder and flour and mix until well combined.
  • Fold in the chocolate chips last.
  • Spoon the filling into the prepared crust and smooth. Bake for 35-40 minutes. Remove from the oven and let cool for at least an hour before serving.
  • Keep any leftovers in an airtight container in the refrigerator for up to 3 days.
