Ingredients
3–4 lb chuck roast
1large yellow onionsliced into rings
1cupwhole berry cranberry saucenot jellied
2tablespoonsbrown sugar
4garlic clovesfinely minced
1tablespoondried minced onion
1teaspoonground thyme
1teaspoonkosher salt
1/2teaspoonblack pepper
2tablespoonsWorcestershire sauce
Instructions
Preheat oven to 325°F (163°C).
Layer sliced onions evenly in a large baking dish to create a bed for the roast.
Place the chuck roast on top of the onions.
Sprinkle with minced garlic, brown sugar, dried minced onion, ground thyme, salt and black pepper.
Spoon the cranberry sauce evenly over the top of the roast.
Drizzle Worcestershire sauce around the roast.
Cover the baking dish tightly with foil.
Bake for 3 hours, or until the roast is fork-tender.
Remove from oven, shred meat in the dish, and mix with the pan juices and softened cranberries.
Serve with mashed potatoes and green beans if desired.
