  • 1 tablespoon garlic
  • 1 pound lean ground beef
  • 1 teaspoon cumin
  • 1 teaspoon chile powder or chipotle powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Mexican blend cheese
  • 12 corn tortillas
  • 1/4 cup cilantro
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Mexican oregano
  • Lime cut into wedges
  • For serving: Shredded lettuce Diced tomatoes, Sour cream, pico de gallo, salsa

Instructions

  • Heat the oven to 350°. Heat the olive oil and cook the onions till translucent or lightly browned. Add the garlic and cook for an additional minute. Remove from the pan.
  • Cook the meat till it is no longer pink and add the cumin, chili powder, salt and pepper, then stir in the onions.
  • Dampen a tea towel or 2 to 3 paper towels and ring out. Place the tortillas in the middle and fold the towel over the tortillas. Place in the microwave and heat on high for 30 seconds. If they aren’t warm enough, heat for an additional 10 seconds.
  • Remove a tortilla and add a large tablespoon of filling. Gently fold the tortilla in half and place on a baking sheet. (To help the tacos stay folded, position them back to back.) Repeat till all the tortillas have been filled.
  • Bake for 15 to 20 minutes, testing for your desired crispiness.
  • Remove and serve with your favorite taco toppings.
