Crock Pot Steak and Potatoes

Crock Pot Steak and Potatoes is a meal in one that is made with ribeye steak, baby potatoes, French onion soup mix and some slabs of butter. A flavorful and easy dinner that you can make any night of the week.

Ingredients

  • 2-3 lbs ribeye steaks
  • 1.5 lbs baby gold potatoes halved
  • 1 packet French Onion soup mix dry
  • ½ cup unsalted butter sliced into pats
  • Salt and pepper to taste
  • Optional* fresh chopped parsley for garnish

Instructions

  • Optional step: sear steaks for a couple minutes per side in a large skillet over medium high heat with some oil or a tablespoon of butter. (You do not need to cook the steaks through, just sear to lock in extra flavor.)
  • Season both sides of the steaks with salt and pepper and half of the dry onion soup mix. Add steaks to the bottom of a 5 quart or larger slow cooker. Add the halved potatoes around the steaks.
  • Sprinkle the remaining dry soup mix over the top of the steaks.
  • Add the sliced butter pats on top of the steaks and potatoes.
  • Cover and cook on low for 5-7 hours, or high for 3-4 hours, until the steak is cooked through and fork tender. (Cooking times will vary depending on the thickness of steaks.)
  • Garnish with fresh parsley. Serve immediately with a salad or steamed vegetables, enjoy!
