Crockpot Mississippi Meatloaf

2 pounds ground beef used 90/10 1 cup panko bread crumbs 1 cup milk 2 eggs 2 1 ounce ranch dressing seasoning packets 2 1 ounce au jus gravy mix packets 1 tablespoon minced dried onion 2 cups water 6-8 pepperoncini peppers Optional* 1 tablespoon chopped fresh parsley for garnish
Mix ground beef, bread crumbs, milk, eggs, 1 ranch packet, 1 aus jus packet and minced dried onion together in a large bowl until just combined.
Whisk remaining ranch and au jus packets with the water, set aside.
Add foil to the bottom of a 5 quart or larger slow cooker and spray with cooking spray.
Form a meatloaf shape out of the meat mixture and place on the foil in the slow cooker.
Pour the water mixture on and around the meatloaf and add the pepperoncini peppers to the slow cooker.
Cover and cook on low for 6 hours, or high for 3-4 hours, until the meatloaf is cooked through with an internal temp of 165F.
Garnish with fresh parsley, if desired.
Serve warm over mashed potatoes or rice, enjoy!
