Preheat oven to 425F.
Combine 1 1/2 cups four cheese blend and cream cheese in a medium bowl and microwave in 30-second intervals until melted.
Remove from the microwave and add in almond flour, coconut flour, Italian seasoning, and the egg.
Mix with a silicone spatula until a sticky dough forms.
Let dough sit for about 5 minutes to cool.
Place dough between two sheets of parchment paper and roll until dough is about 1/4 inch thick. Remove top layer of parchment paper and transfer rolled dough with the bottom layer of parchment to a large baking sheet.
Sprinkle 1/4 cup four cheese blend over the dough, leaving 1/2 inch around the edges.
Bake for about 6 minutes and top with remaining cheese.
Bake for an additional 5 minutes and garnish with chopped parsley and parmesan cheese before serving.
