French Onion Pork Chops

Ingredients

  • 4 boneless center-cut pork chops 1-inch thick
  • Olive oil for frying
  • 1 cup caramelized onions
  • 1 cup beef stock
  • 4 tsp whole-grain dijon mustard
  • 4 slices provolone cheese
  • ¼ tsp dried thyme
  • 1/2 tsp salt optional
  • 1/4 tsp pepper

Instructions

  • Preheat oven to 350 degrees.
  • In an oven proof skillet, heat oil over medium high heat.
  • Season porkchops.
  • Sear the chops on both sides in the skillet. Remove from the pan and set aside.
  • In the skillet, add the stock and thyme.
  • Add the caramelized onions and simmer for 3-5 minutes for all the flavors to melt together well.
  • Meanwhile, spread each pork chop with 1 tsp of mustard on top and then place the meat into the onion sauce.
  • Place the skillet into the oven for 20 – 25 minutes until the pork chops read 160 Fahrenheit.
  • Remove the frying pan from the oven and carefully add the cheese to the top of each pork chop.
  • The skillet goes back into the oven for about 5 minutes until the cheese melts and lightly browns.
