Ingredients

  • 8 slices bacon uncooked and chopped
  • 1 sweet onion chopped
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 3 jalapeno peppers finely chopped
  • 2 cloves garlic minced
  • 1/3 cup all purpose flour
  • 3 cups chicken broth
  • 1 8oz package cream cheese
  • 2 cups chicken cooked and shredded
  • 1 cup heavy whipping cream
  • 1 tablespoon taco seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup cheddar cheese shredded
  • For garnish: sliced green onions bacon bits, shredded cheddar cheese, sliced jalapenos

Instructions

  • Add bacon, onion, green pepper, red pepper, jalapeno peppers and garlic to a large pot over medium heat. Cook, stirring occasionally, for 10 minutes or until onions are translucent and veggies are softened.
  • Stir in flour. Cook for 1 minute, stirring constantly.
  • Stir in chicken broth, cream cheese, chicken, heavy whipping cream, taco seasoning, salt, and pepper. Bring to a boil.
  • Once boiling, reduce heat to medium low and simmer for 30 minutes, uncovered, stirring occasionally.
  • Remove from heat and stir in cheddar cheese.
  • Ladle into soup bowls and garnish with sliced green onions, bacon, cheddar cheese and jalapenos, if desired.
