In a large sauce pot, heat the oil and garlic with seasonings (except cheese) for about 1 minute , stirring constantly- be sure not to overcook the garlic.
Add in the crushed tomatoes and mix well , lower heat and allow to cook at least 10 minutes, stirring frequently.
Once cooked, add in the parmesan cheese, mix, THEN pour in the noodles.
Add in pepperoni and continue to cook until sauce becomes slightly thickened.
Garnish noodles with more parmesan. Serve immediately.
