Ingredients
1ringor package of turkey kielbasa, cut into rounds.
2potatoesyellow potatoes or Yukon golds are great, peeled and chopped into bitesize pieces
½large oniondiced
½sweet pepper(orange, yellow or red), diced
1large green pepperdiced
salt and pepperto taste
oil for frying
Instructions
Heat a large skillet over medium heat and add the oil. When heated, add the potatoes, and cook them about ten minutes or until they are just fork tender and have a bit of color on them.
Remove them from the pan and set aside.
Add the kielbasa (adding more oil if needed) to the skillet and brown the sausage until it’s cooked through and has gained some caramelization.
Remove the sausage and set aside.
Add the peppers and onions, seasoning with salt and pepper. Cook until slightly softened.
Add back the sausage and the potatoes. Taste for seasoning and adjust if more salt and pepper are needed.
