These St. Patrick’s Day Chocolate Chip Cookie Bars are soft, chewy, and packed with green M&M’s and semi-sweet chocolate chips. Baked in a single pan, this easy dessert delivers all the flavor of classic chocolate chip cookies in thick, bakery-style bars that are perfect for parties, holiday trays, or a simple homemade treat.

Ingredients
½cupunsalted sweet cream buttersoftened
½cuplight brown sugarpacked
¼cupgranulated sugar
1large egg
1teaspoonpure vanilla extract
½teaspoonbaking soda
¼teaspoonbaking powder
¼teaspoonkosher salt
¼teaspooncornstarchoptional but recommended for softer bars
1½cupsall-purpose flour
¾cupgreen M&M’s
¾cupsemi-sweet chocolate chips
Instructions
Preheat the oven to 350°F. Line a 9×9 baking dish with parchment paper.
In a stand mixer or large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg and vanilla extract and mix until fully combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cornstarch.
Gradually add the dry ingredients into the wet ingredients and mix just until combined. Do not overmix.
Fold in the green M&M’s and chocolate chips.
Press the dough evenly into the prepared baking dish.
Top with a few extra M&M’s and chocolate chips for a pretty finish.
Bake for 20–25 minutes, or until the edges are lightly golden and the center is just set.
Remove from the oven and allow the bars to cool completely before cutting into squares.
Tip:
For extra soft cookie bars, remove them from the oven when the center still looks slightly underbaked. They will finish setting as they cool. Also, Chill dough for 20 minutes (optional but recommended)
