Strawberry Tiramisu

Strawberry Tiramisu is a strawberry inspired tiramisu recipe that uses fresh strawberries, ladyfingers, and a creamy and velvety mascarpone layer. The ultimate Italian dessert.

Ingredients

  • 3 cups fresh strawberries roughly chopped
  • cup granulated sugar
  • 16 ounces mascarpone cheese
  • 12 ounces ladyfingers
  • 21 ounces strawberry pie filling
  • 2 cups heavy whipping cream
  • 2 teaspoons vanilla extract
  • ¾ cup powdered sugar sifted
  • 6 tablespoons vanilla instant pudding a little less than one 3.4 ounce box
  • ¾ cup powdered sugar sifted

Instructions

Strawberry Mixture

  • Add the strawberries into a bowl and add granulated sugar. Stir well and let sit for 10 minutes. Then mash the berries with a fork.
  • Add in the strawberry pie filling and set to the side.

Mascarpone

  • In a stand mixer or large bowl whip up the heavy cream and vanilla extract for 2-3 minutes on medium speed with a mixer. You want the texture to be frothy.
  • Add in the powdered sugar and pudding mixture, and mix for 3-4 minutes and you want it to create stiff peaks.
  • Work in 1/2 of the mascarpone cheese. Then add in the rest of the mascarpone, and mix another 4 minutes on medium.

Assembly

  • Spray 9x9 baking dish with cooking spray.
  • Dip lady fingers in strawberry mixture. Jsut for a second for the cookies to soak in the juice.
  • Place the cookies in a single layer on a prepared baking tray.
  • In your pan you place layer of ladyfingers, then otp with half the strawberry mitutre.
  • Top with the mascarpone layer, and spread evenly.
  • Then repeat the steps again: ladyfingers, strawberries, and mascarpone.
  • Cover and refrigerate for at least 6 hours.
  • Before serving top with fresh berries, whipped cream, etc. Or serve it plain.
