Summer Pasta Salad

Summer Pasta Salad is a rotini pasta salad loaded with crisp vegetables, sliced salami, and a homemade dressing. A great potluck or summer salad to dish up for friends and family.

Ingredients

For the salad:

  • 1 16 oz box rotini pasta
  • 1 ½ cup chopped salami
  • 1 small red bell pepper diced
  • ½ of a small orange bell pepper diced
  • ½ of a small yellow or green bell pepper diced
  • 1 ½ cups diced cucumber
  • 1 cup cherry tomatoes halved
  • ½ cup sliced black olives
  • ½ cup diced red onion

For the dressing:

  • ½ cup extra virgin olive oil
  • cup red wine vinegar
  • 1 tablespoon italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  • Cook pasta according to package directions. Rinse pasta under cool water, drain and set aside in a large bowl to fully cool.
  • In a small bowl, whisk together the dressing ingredients until well combined. Adjust seasoning with salt and pepper.
  • Add dressing and remaining ingredients to a large mixing bowl with the cooled pasta and toss well. Chill covered for at least an hour before serving. When ready to serve, stir and enjoy!
