Ingredients

  • 1 - 11/2 to 2 pound T-Bone steak 2 inch thick, room temperature
  • 1 tablespoon olive oil
  • Kosher salt and ground black pepper to taste
  • Fresh herbs sprigs - thyme rosemary and oregano

Compound Butter:

  • 3 tablespoons unsalted butter room temperature
  • 1 tablespoon minced garlic
  • 2 Thyme sprigs stems removed, then finely minced
  • 2 Rosemary sprigs stems removed, then finely minced
  • 2 Oregano sprigs stems removed then finely minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Heat the oven to 400°. Once heated, place a cast iron pan in the oven for 10 minutes. Remove the pan from the oven and place on the stove. Place the pan on medium high heat and add the olive oil.
  • Season the meat liberally with salt and pepper. Place the seasoned steak in the hot pan. Add some sprigs of herbs and cook the steak according to the doneness you prefer.
  • ***2 minutes per side for rare, 3 1/2 minutes per side for medium rare, or 5 minutes per side for medium and 6 minutes per side for well done.
  • To make the compound butter, combine all the ingredients and stir well.
  • Add a spoon of the butter on the hot steak after you flip it. Let the butter melt while the second side is cooking.
  • When the steak has cooked, remove it immediately from the hot pan and you can add more herbed butter.
  • Let the steak rest for 5 minutes before cutting.
