Cranberry White Chocolate Oatmeal Cookies

Ingredients

Servings: 30 cookies

  • 1 cup all - purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup unsalted butter softened
  • 1/2 cup light brown sugar
  • 1/4 cup sugar
  • 1 large egg room temp
  • 1 tsp vanilla extract
  • 2 1/2 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Instructions

  • In a medium-size mixing bowl sift together all-purpose flour, baking soda, cinnamon, nutmeg, and salt. Set to the side
  • In another large mixing bowl add the butter, brown sugar, granulated sugar, vanilla extract and egg. Mix until combined.
  • Add half of the flour mixture to the butter mixture, Mix to combine.
  • Repeat.
  • Add oats, cranberries, and white chocolate chips. Mix until combined.
  • Cover the dough with plastic wrap and place it in refrigerator for an hour.
  • Preheat the oven to 350°F.
  • line a baking sheet with parchment paper.
  • Use a small ice cream scoop for the dough and roll it into balls.
  • Bake the cookies for about 10-12 minutes.
  • Remove from the oven and place on a cookie rack & Allow to cool.
  • Enjoy!
