Ingredients
2boneless pork tenderloinsabout 3-3.5lbs total
1tablespoonolive oil
1 14ozjar apricot preserves
⅓cupchicken or vegetable broth
¼cuplow sodium soy sauce
3garlic clovesminced
1tablespoonstone ground mustard
2teaspoonsminced dried onion
½teaspoonground black pepper
Salt to taste
Optional* Chopped fresh parsleyfor garnish
Instructions
Trim any excess fat off of the pork tenderloins.
Heat olive oil in a large skillet over medium high heat. Season the tenderloins with pepper and lightly with salt and add to the pan. Sear for 2-3 minutes per side.
Transfer the seared tenderloins to the bottom of a 5 quart or larger slow cooker.
Mix remaining ingredients together in a medium sized bowl and pour over the top of the pork tenderloins.
Cover and cook on low for 4-6 hours, or high for 2 ½- 3 hours, until the pork is cooked through and reaches an internal temperature of 145F.(Cooking time may vary depending on the thickness of tenderloins).
Let the tenderloins rest for 10 minutes. Slice and garnish with parsley. Serve with mashed potatoes or rice, enjoy!
