Ingredients

  • 2 boneless pork tenderloins about 3-3.5lbs total
  • 1 tablespoon olive oil
  • 1 14 oz jar apricot preserves
  • cup chicken or vegetable broth
  • ¼ cup low sodium soy sauce
  • 3 garlic cloves minced
  • 1 tablespoon stone ground mustard
  • 2 teaspoons minced dried onion
  • ½ teaspoon ground black pepper
  • Salt to taste
  • Optional* Chopped fresh parsley for garnish

Instructions

  • Trim any excess fat off of the pork tenderloins.
  • Heat olive oil in a large skillet over medium high heat. Season the tenderloins with pepper and lightly with salt and add to the pan. Sear for 2-3 minutes per side.
  • Transfer the seared tenderloins to the bottom of a 5 quart or larger slow cooker.
  • Mix remaining ingredients together in a medium sized bowl and pour over the top of the pork tenderloins.
  • Cover and cook on low for 4-6 hours, or high for 2 ½- 3 hours, until the pork is cooked through and reaches an internal temperature of 145F.(Cooking time may vary depending on the thickness of tenderloins).
  • Let the tenderloins rest for 10 minutes. Slice and garnish with parsley. Serve with mashed potatoes or rice, enjoy!
