Ingredients Needed

Tenderloins: This recipe calls for two pork tenderloins. If you want to make less, reduce the other ingredients to make just one.

Olive Oil: You can use a little bit of oil. You can easily replace it with canola or vegetable oil.

Apricot Preserves: You can find these in the grocery store near the jelly and jams. Use them to add a nice, sweet flavor to your pork.

Broth: You can use chicken or vegetable broth for this recipe.

Soy Sauce: Feel free to use regular or low-sodium soy sauce if you are watching your sodium intake.

Garlic: Fresh cloves that are minced or jarred garlic can be used for this recipe.

Mustard: I recommend using stone-ground mustard, as it is a more robust-flavored mustard that will help balance out the sweetness.

Spices: Minced dried onions, salt, pepper, and fresh parsley flavor the dish.

Variations to Recipe

  • Peach preserves or orange marmalade are an excellent swap to the apricot for a twist in flavor.
  • Dijon mustard or even horseradish mustard can be swapped for stone-ground mustard.
  • Add spice with red pepper flakes or a splash of hot sauce or sriracha.
  • Swap the pork tenderloins with boneless chicken breasts or even chicken thighs.
  • Add in 1/2 teaspoon fresh ginger for a bit of a zesty twist.
  • You can add in vegetables if you would like. Potatoes, carrots, or other vegetables can be cooked with pork.
  • To brighten up the pork, add a splash of orange juice when it cooks or even top it with some orange zest.

Storing and Freezing

You can store your leftover tenderloin in the fridge for 3-4 days. You can reheat it in the oven, stovetop, or even microwave. Just heat low and slow to prevent the pork from drying out.

Another option is to freeze the pork. Freeze for up to 3 months. Then thaw in the fridge overnight before you reheat. If you prefer, you can defrost straight from the freezer.

Tips For Success

  • If you find any silverskin on the pork, you can carefully trim it before you begin to cook.
  • Searing the pork before you cook it in the slow cooker will help create tons of flavor for the pork, which you will not get otherwise. You can skip this step, but I recommend searing the pork first.
  • Do not open the slow cooker lid while the pork is cooking, as this will release heat and cause the pork to cook longer.
  • Once the pork is done, make sure to let it rest on the counter for 10 minutes before slicing it. This helps lock in the meat’s moisture.

What to Serve With The Pork

This is a very versatile dish you can serve with all sides. My go-to’s are mashed potatoes, broccoli, green beans, rice, etc. Feel free to play around with all your favorite sides and find what you like the most.

FAQs

Can I use pork loin instead of tenderloin?

You can use a loin to replace the tenderloin. The biggest thing is to adjust the cooking time to fit the size of the pork used. The internal temperature needs to read 145 degrees.

How can I thicken the sauce?

To thicken the sauce, remove it from the slow cooker and put it in a saucepan on the stove over medium heat. Once boiling, mix one tablespoon of cornstarch with one tablespoon of cold water. Stir in, and it will thicken within a few minutes.

Can I double the recipe?

I made this in a 6-quart slow cooker. If you want to double the recipe, use a larger slow cooker to ensure your meat is not overcrowded.

Ingredients
  

  • 2 boneless pork tenderloins about 3-3.5lbs total
  • 1 tablespoon olive oil
  • 1 14 oz jar apricot preserves
  • ⅓ cup chicken or vegetable broth
  • ¼ cup low sodium soy sauce
  • 3 garlic cloves minced
  • 1 tablespoon stone ground mustard
  • 2 teaspoons minced dried onion
  • ½ teaspoon ground black pepper
  • Salt to taste
  • Optional* Chopped fresh parsley for garnish

Instructions

  • Trim any excess fat off of the pork tenderloins.
  • Heat olive oil in a large skillet over medium high heat. Season the tenderloins with pepper and lightly with salt and add to the pan. Sear for 2-3 minutes per side.
  • Transfer the seared tenderloins to the bottom of a 5 quart or larger slow cooker.
  • Mix remaining ingredients together in a medium sized bowl and pour over the top of the pork tenderloins.
  • Cover and cook on low for 4-6 hours, or high for 2 ½- 3 hours, until the pork is cooked through and reaches an internal temperature of 145F.(Cooking time may vary depending on the thickness of tenderloins).
  • Let the tenderloins rest for 10 minutes. Slice and garnish with parsley. Serve with mashed potatoes or rice, enjoy!
