Garlic Butter Steak

Ingredients

Steaks:

  • 4 7oz. 1" thick New York strip steaks
  • Salt to season
  • Cracked black pepper to season
  • 2 Tbsp. Olive oil divided
  • 4 Tbsp. Salted butter divided
  • 6 cloves Lightly crushed garlic divided
  • 6-8 Thyme rosemary, or parsley sprigs, divided

Mushroom Sauce:

  • 2 cloves Crushed garlic
  • 1 tsp. Worcestershire sauce
  • 1 cup Sliced baby bella mushrooms
  • 1/2 cup Heavy cream
  • Salt and pepper to taste

Instructions

  • Allow steaks to stand at room temperature for at least 30 minutes before seasoning with salt and fresh cracked pepper.
  • Heat a large cast iron pan over medium-high heat and coat the pan with 1 Tablespoon of olive oil. When pan starts smoking, lay 2 steaks into the pan, away from you.
  • Cook for 3 minutes on each side. Reduce heat to medium-low and add 2 tablespoons of butter, 3-4 sprigs of chosen herb, and 3 cloves of crushed garlic. Allow butter to foam and baste steaks constantly while cooking steaks to preference.
  • Transfer steaks to a plate and pour juices over steaks; let rest for 5 minutes. Discard sprigs. Repeat steps with remaining 2 steaks then remove from pan and let them rest. Discard sprigs but keep juices in the pan.
  • Add crushed garlic to the juices in the pan and saute on medium heat until fragrant, about 30 seconds. Add Worcestershire and mushroom and cook until mushrooms are soft. Add heavy cream and season with salt and pepper. Serve steak and top with mushroom sauce.
