Loaded Cheesy Cauliflower Casserole

Ingredients

  • 2 lbs. cauliflower florets chopped and steamed
  • 1 8 oz. package cream cheese, softened to room temperature
  • 1/2 cup sour cream
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 1/2 cups shredded Colby Jack cheese
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 6 strips cooked bacon chopped
  • 1/2 cup chopped chives or sliced green onions
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper

Instructions

  • Preheat oven to 425F and spray a 13x9" casserole dish with nonstick cooking spray.
  • Combine sour cream, cream cheese, both cheese, garlic powder, and onion powder in a large bowl and stir.
  • Add cauliflower, half of the bacon, half of the chopped chives or green onions, salt, and pepper and stir to combine.
  • Pour into the prepared dish and sprinkle with the rest of the bacon.
  • Bake for 25 minutes and garnish with the remaining chopped chives.
