New England Lobster Rolls

Ingredients

  • 1 lb. chunk lobster meat
  • 1/3 cup mayonnaise
  • 1 tbsp. lemon juice
  • 1 stalk celery finely chopped
  • 2 tsp. parsley chopped
  • 1 tbsp. scallions chopped
  • salt and pepper to taste
  • 2 tbsp. salted butter melted

Instructions

  • In a large bowl, combine all ingredients except lobster meat and butter and stir to combine.
  • Add lobster meat and stir.
  • Brush a few split-top hot dog rolls with the melted butter and toast.
  • Scoop lobster filling into the toasted rolls and serve.
