Oatmeal Raisin Cookies

Ingredients

Total Time: 25 minutes

Yield: 2 1/2 dozen cookies

  • 1/2 cup sugar
  • 3/4 cup dark brown sugar packed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened at room temperature
  • 1/4 cup unsweetened applesauce room temperature
  • 1 teaspoon vanilla
  • 2 cups quick-cooking oats uncooked
  • 1/2 cup raisins
  • 1/2 cup white chocolate chips or chocolate if you prefer

Instructions

  • Preheat the oven to 350 F
  • Line a baking sheet with parchment paper or silicone baking mat.
  • In a large mixing bowl whisk together the sugar, brown sugar, flour, baking powder & salt.
  • Add softened butter, applesauce and vanilla and stir until well combined.
  • Mix in oatmeal.
  • Add white chocolate chips and raisins to the mixture and stir.
  • Use a cookie scoop to make 1 inch rounds and place on the baking sheet.
  • Let the cookies sit on the baking sheet for 2 minutes before transferring them to a wire rack to cool.
