Sheet Pan Tacos

Ingredients

  • 3 tablespoons vegetable oil
  • 2 cups onion chopped
  • 3 pounds lean ground beef
  • 3 1 oz packages taco seasoning
  • 1/4 cup fresh lime juice
  • 16 8-inch flour tortillas
  • 3 diced tomatoes
  • 1/4 cup cilantro chopped
  • 4 cups Mexican blend cheese
  • Pico de Gallo optional
  • Sour cream for serving, optional

Instructions

  • Heat the oven to 350° and spray a 13x18-inch rimmed pan with cooking spray.
  • In a large skillet, heat the oil and add the onions. Cook for 4 minutes, then add the hamburger and cook till no longer pink.
  • Stir in the taco seasoning and lime juice.
  • Line the baking pan with 10 tortillas, making sure that they overlap and hang out of the pan about halfway. Place 2 to 3 tortillas down the middle to make sure there are no gaps.
  • Spoon the meat over the tortillas, top with tomatoes, cilantro and cheese.
  • Place the remaining tortillas, overlapped down the middle of the top, then fold the tortillas over the top to seal in the meat.
  • Place another large pan over the top to hold the top in place. Place in the oven and bake for 30 minutes, until the tortillas have browned lightly.
  • Remove and cut into pieces. Top with sour cream and pico de gallo.
