Slow Cooker Creamy Chicken Spinach Tortellini

Ingredients

Serves 8

Cook time- 4 hours

  • 4 boneless skinless chicken breast
  • 8 oz. cream cheese
  • 1 onion diced
  • 4 cloves garlic minced
  • 5 cups chicken broth
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 pound frozen cheese tortellini
  • 4 cups fresh spinach

Instructions

  • Add the chicken breasts to the slow cooker, along with onion, garlic, chicken broth, salt and pepper
  • Cook on low for 5 1/2 hours.
  • Remove the cooked chicken from the crock pot and shred, then back into the slow cooker.
  • In a bowl whisk the milk, heavy cream, SOFTENED cream cheese and flour.
  • Mix in with the chicken
  • Add the tortellini and spinach now.
  • Cook for 30 minutes until tortellini is cooked through and soup has thickened.
  • Serve and enjoy!
