Slow Cooker Creamy Chicken Spinach Tortellini
Ingredients
Serves 8
Cook time- 4 hours
- 4 boneless skinless chicken breast
- 8 oz. cream cheese
- 1 onion diced
- 4 cloves garlic minced
- 5 cups chicken broth
- 1 cup whole milk
- 1 cup heavy cream
- 1/4 cup flour
- 1/2 tsp salt
- 1 tsp black pepper
- 1 pound frozen cheese tortellini
- 4 cups fresh spinach
Instructions
- Add the chicken breasts to the slow cooker, along with onion, garlic, chicken broth, salt and pepper
- Cook on low for 5 1/2 hours.
- Remove the cooked chicken from the crock pot and shred, then back into the slow cooker.
- In a bowl whisk the milk, heavy cream, SOFTENED cream cheese and flour.
- Mix in with the chicken
- Add the tortellini and spinach now.
- Cook for 30 minutes until tortellini is cooked through and soup has thickened.
- Serve and enjoy!
