Although it might sound complicated to make, it is a lot easier than you think, and the outcome is magnificent. If you enjoy cheese, tomatoes, and chicken, you will get to combine these three ingredients to prepare juicy, cheesy chicken.

How do you stuff chicken?

Stuffing chicken is a rather simple process. You can place the chicken breasts on a cutting board and begin cutting down horizontally with a sharp knife. Although you are going to cut into the chicken, do not cut all the way down to ensure that you make a pocket for your ingredients. Once you make this slit, you can add your ingredients into the chicken to stuff it before you prepare it.

Let your chicken breasts sit in the marinade for a minimum of two hours. If you can leave the chicken marinated a bit longer, it is even better because the chicken will absorb all the flavor.

It is best to use fresh spinach when you are preparing the stuffed Chicken Breast Recipe. However, if you only have frozen spinach available to use, you can thaw it and then add it to your chicken while stuffing it with the ingredients. If you have already marinated the chicken for several hours, you can have this meal ready in about 30-45 minutes. It may take a few minutes for you to stuff the chicken with the spinach, sun-dried tomatoes, and cheese. Once you stuff the chicken, you’ll sear it, which only takes several minutes. As a finishing touch, you will put it in the oven and bake it for a maximum of 15 minutes. It is a quick meal that you can serve for dinner.

Ingredients
  

  • 2 large boneless, skinless chicken breasts
  • 3/4 cup Kraft Sun Dried Tomato Vinaigrette Dressing & Marinade
  • 1/2 cup sundried tomatoes
  • 1/2 cup spinach roughly chopped
  • 1/2 cup feta cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  • Marinate chicken breasts in the dressing for 2-3 hours.
  • Preheat oven to 375 degrees F.
  • Carefully cut chicken horizontally, but not all the way through.
  • Open chicken breasts and layer on sundried tomatoes, spinach, feta, and mozzarella.
  • Fold the top of the chicken breast back over the filling and pin the opening shut with a few toothpicks.
  • Sear meat in an oiled cast iron pan until golden on both sides.
  • Cover and bake for 10-15 minutes, or until chicken is cooked through.
  • ENJOY!
