This is one of my most favorite snacks!
Its basically a magical cross between bean salad and salsa!
Its perfect served with tortilla chips or and type of dip worthy chip 🙂
Super simple to throw together too!
The dressing itself is magical!

Cowboy Caviar!
Ingredients
- 1 can black beans drained
- 1 can sweet corn drained
- 1 can black eyed peas drained
- 1 bell pepper any color, diced
- 2 cups grape tomatoes , halved
- 1 jalapeño diced very small (seeds removed)
- 1/2 red onion chopped
- 1/4 bunch fresh cilantro chopped small
DRESSING
- 2 Tbsp olive oil
- 1 fresh lime 2 Tbsp juice
- 1/2 Tbsp red wine vinegar
- 1/2 tsp chili powder
- 1/2 teaspoon brown sugar
- 1 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp sugar
- 2 cloves garlic crushed
Instructions
- Rinse and drain both cans of beans in a strainer and allow the excess water drain out
- Combine all of the salad ingredients in a large bowl.
- Mix to combine and set to the side.
- In a separate small bowl, combine the dressing ingredients and mix well.
- Pour the dressing over the salad, then stir until everything is well coated.
- Serve immediately OR keep refrigerated until ready to eat.
- ENJOY!
