- 3 tbsp. cornstarch
- 3/4 cup water
For the Topping:
- 1 1/2 cups all purpose flour
- 1 tbsp. white sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup 1 stick chilled unsalted butter, chopped finely
- 1/3 cup buttermilk
Instructions
- Preheat oven to 350F and spray an 8 x 8 inch baking pan with baking spray.
- Combine blackberries and sugar in a large saucepan over medium-high heat and cook until mixture begins to bubble, stirring occasionally.
- In a small bowl, whisk together cornstarch and water until combined and add to the saucepan.
- Stir and bring mixture to a low boil. Let cook for about 3-5 minutes, until filling has thickened.

I’ve made a few cobblers over the last couple years and this is nearly the same recipe. I’ve been tweaking the sweetener side such as with the fruit, ripe (fresh or frozen) about a 1/4 – 1/3 cup Agave, and for the batter about 1/2 cup honey or 1/4 cup agave. The ice cream makes up for some who perceive lack of sweetness. Can always adjust to personal taste. Been using milk but looking forward to the buttermilk on the next one. Great recipe, delicious, easy instructions and easy to make.
