Hot Chocolate Cookies

Serve up a plate of these hot chocolate cookies to your family or place them on Santa’s cookie plate the night before Christmas. You start with a sugar cookie mix and then dress it up with cocoa powder, chocolate chips, and gooey marshmallows on top. All you need are 6 ingredients.

Pair with a cup of warm homemade hot chocolate to sip on as you devour these gooey and chewy cookies. Or serve with a tall glass of milk to wash down the sweetness of the cookies.

Ingredients Needed

Sugar Cookie Mix – Reach for a bag of sugar cookie mix found in the baking aisle at the grocery store. This is the base of the cookies.

Dark Chocolate Chips – So I used dark chocolate chips for helping to enhance the richness of these cookies.

Cocoa Powder – Cocoa powder is going to help offer a chocolate flavor to the base of the sugar cookie mix as well.

Eggs – Eggs are the binder of the cookie recipe. A must for creating the right texture.

Butter – Real butter is recommended for these cookies as it adds flavor but also that buttery light texture to the cookies.

Marshmallows – Mini marshmallows are the perfect topper for the cookies!

Variations to Recipe

  • You can use any type of chocolate chip you would like. I prefer dark chocolate but you could opt for milk chocolate, white chocolate, etc.
  • Add some graham cracker crumbles on top for a s’mores twist to the cookies.
  • Mix some dehydrated marshmallows into the cookie batter before you scoop and bake.
  • Drizzle the top of the cookies with some caramel sauce or even hot fudge for added flavor.

Tips for Success

Overmixing Cookie Dough

Make sure to not overmix the cookie dough as it can cause your cookies to become dense and heavy. I find that using a spatula and bowl is the best way to mix up the dough. Or use a low speed on a hand mixer.

Cookie Scoop

Cookie scoops are great for getting evenly sized cookies that all bake up the same amount of time. If you guess on the cookie scoop size you will find some cookies will bake quicker or slower than others.

Prepping Your Baking Sheet

You are going to find that lining your tray with a silicone baking mat or even a parchment paper-lined baking sheet is going to be the best for preventing the cookies from sticking.

Storing Cookies

These chocolate cookies can be stored at room temperature in an airtight container. The cookies will be stored for around 4-5 days.

Now you can also freeze the cookies if you would like. Simply place it in a freezer bag or freezer container. The hot chocolate cookies will be stored in the freezer for 3-4 months. Then eat straight from the freezer or thaw on the counter.

FAQs

Do hot chocolate cookies have marshmallows in them?

This is an answer that can be yes or no. My recipe does not have marshmallows in the cookies just placed on top. Whereas some recipes on the internet might mix in marshmallows with the cookie dough.

Can I use a gluten-free sugar cookie mix?

Yes, if you want a gluten-free cookie go right ahead and reach for a sugar cookie mix that uses gluten-free flour.

While these cookies can be associated with the holiday season, these cookies can be made all year round. A delicious chocolate cookie with a twist.

Hot Chocolate Cookies are a must make for the winter months. A sweet sugar cookie base that is paired with cocoa, dark chocolate, and marshmallows. A gooey, chewy, and delicious cookie for the whole family.

Ingredients
  

  • 1 17.5 ounces packet of sugar cookie mix
  • 1 cup dark chocolate chips
  • ⅓ cup cocoa powder
  • ½ cup 1 stick salted butter, softened
  • 1 large egg
  • 12 marshmallows halved, or 36 mini marshmallows

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line several baking sheets with parchment paper.
  • Mix the sugar cookie mix, dark chocolate chips, and cocoa powder in a large mixing bowl until combined.
  • Use a hand or stand mixer to beat in the butter and large egg until a thick dough forms, about 2-3 minutes. The dough may not come together initially, but it will keep beating.
  • Use a 1 ½ Tablespoon cookie scoop to scoop out dough balls and roll them into balls about the size of a golf ball.
  • Bake each baking sheet individually for 11-14 minutes or until the cookies begin to get firm on the edges.
  • Top each cookie with ½ of a marshmallow or 3 mini marshmallows, pushing it into the center so the cookie expands slightly.
  • Bake again for 2-3 minutes or until the marshmallows puff up and take on a golden color at the edges.
  • Remove the cookies from the oven and allow them to cool on the cookie sheet for at least 5 minutes before removing to a cooling rack or serving plate.
  • Serve warm with your favorite hot beverage, optional.
