Slow Cooker Fiesta Chicken is ultra flavorful tender shredded chicken that is perfect for a variety of dishes!
Wonderful on Tacos, burritos or even on top of loaded nachos!
The slow cooker really has the ability to create some of the ultimate, moist chicken that is sure to be a hit!
Though you can use this incredible chicken in so many different dishes, I chose to make my famous crispy loaded tacos! I loaded up my crispy tortillas with all my favorite toppings: cheese, avocado, lettuce, black olives and sour cream!
This recipe is very versatile! I’ve used it on tacos 70% of the time but its also amazing in soups, dips, on nachos, in chicken chili or even on my taco salad!
Great for a freezer meal idea too! Make it ahead of time, freeze and use whenever you want to add this yummy chicken to one of your meals!
I used flour tortillas to make my crispy shells for this recipe because my family likes them more, but this recipe can easily be made with corn tortillas if you’d prefer!
This is the perfect weeknight dinner that is not only a family favorite but its so easy to make! One of the best parts of this dinner is all of the ingredients are budget friendly!

Slow Cooker Fiesta Chicken
Ingredients
- 4 chicken breast
- 1 packet Fiesta Ranch dip by the salad dressing
- 1 can black beans
- 1 can Rotel
- 1 can corn undrained
- 1 block cream cheese
- Juice of 2 fresh limes
Instructions
- Add the chicken breasts to the bottom of the slow cooker. Add all of the other ingredients to the top of the chicken breasts.
- Cook on HIGH for 4-6 hours.
- Remove the chicken, shred it, and stir it back into the slow cooker.
- Enjoy!
