Slow Cooker Sirloin Beef Tips in Mushroom Gravy!
Ingredients
- 3 pounds high quality sirloin cubed 1-1 1/2 inch in size
- 2 cubes of salted butter
- 4 tablespoon olive oil divided
- 1/2 lb sliced mushrooms
- 1 teaspoon seasoning salt divided
- 1 teaspoon white pepper
- 1 tablespoon black pepper
- 2 cups beef broth
- 2 teaspoons dark brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons ketchup
- 1 teaspoon dried thyme
- 1 cup diced onion
- 3 tablespoons water
- 1 teaspoon Adobo red top
- 2 cloves of garlic minced
- 1 teaspoon parsley
- 2 teaspoons gravy master
- 2 tablespoons cornstarch
Instructions
- In a Large skillet, heat the oil and the salted butter over a Medium heat
- When melted, add in the sirloin cubes and season them with seasoning salt, black pepper, white pepper and adobo until the outside is lightly browned but not fully cooked through
- Transfer into your crock pot now
- Add the beef broth, Worcestershire sauce, mushrooms, brown sugar- then mix in the ketchup - sprinkle the beef with thyme and parsley. Sprinkle the diced onions and garlic over the top.
- Cover the slow cooker and cook on Low for 5 hours.
- Combine water and cornstarch in a separate small bowl , then pour mixture into the crockpot, then add gravy master & Stir until sauce has thickened - cook on LOW for an additional 15 minutes.
- Serve over mashed potatoes
- ENJOY!!
NOTE: Gravy Master is a browning sauce (can be optional but recommended)

I grew up using the term Cube also and people look at me now like I’m crazy. A cube of butter is the same as a stick of butter. It is one fourth of the whole pound of butter because there are four cubes or sticks in each pound.

I know the recipe calls for 2 sticks of butter but I watched the video and it looked like they only used about 1Tablespoon (a pat) of butter. Now I’m confused.

But, a “cube” is a perfect square, equal on all sides. So it can’t be a “stick” of butter.

I was not either then when making this i found it at the grocery store. Not by the other gravy but by the sauces, hot sauce etc….small bottle was around 2.00. Hope this helps.

Kitchen Bouquet is the browning sauce I use; can be found in any US grocery, no doubt. However, PLEASE answer this one…IF 2 cubes is actually 2 sticks of butter, WHY does one need a whole cup of butter, and more olive oil, to brown some beef? That’s a HUGE amount.

12-12-17 I just had my bowl of this DELICIOUS concoction! Here is what I did:
3 lbs of Eye of Round cubed 1″ squares (I know it isn’t the tenderest cut, but here in WA State at $2.98 lb it was the best use of the budget!)
I did not brown the meat in 1 cup of butter (which is what 2 cubes/sticks is) and 1/4 cup oil! I have to wonder if the author must have meant 2 “pats” of butter? 2 Tbsp Butter and 2 Tbsp oil was more than enough. In fact, before I added the cornstarch at the end of the cooking time I had to ladle off probably 1/3 cup grease swimming on top of the liquids.
The rest of the recipe I followed with the exception of not having white pepper. I’m not that ritzy. I didn’t have Adobo seasoning so per the internet instructions I combined to taste and sprinkled on the meat as I sauteed it: paprika, oregano, chili pwd, onion and garlic powders, salt and pepper and the required thyme and parsley, too.
When I was done cooking the meat I put it into the crockpot and put the onions with a Tbsp butter in the frying pan and softened them, scooped them into the crockpot, and to the frying pan added the mushrooms, another Tbsp butter and the Worchestershire and let them saute without getting crisp. Added the the mushrooms and the balance of the ingredients to the crockpot all at once, including about 2 tsp jarred minced garlic in place of fresh, but reserving the water, Kitchen Bouquet and cornstarch until 5 hours was up. The cornstarch wasn’t enough to thicken it well, so I used probably 3 Tbsp cream with another 2-3 Tbsp cornstarch and that made it perfect! The flavor this develops is so savory, so perfect.

A cube of butter is a quarter of a stick of butter, that is to say 1oz. If you cut the stick in half and then half again you will see why it is called a cube of butter! As a rough guide 2 tablespoons equals 1 cube. Your recipe will need half a stick, 1/4 cup or 4 tablespoons, just choose the measure you prefer.

According to the internet a cube of butter could be either a stick (1/4 pound) or 2 tablespoons. I think this recipe must call for 4 tablespoons.

This is truly an awesome recipe and very easy. As I could not find the gravy master at my grocery store, I substituted 3 Tbsp of brown gravy powdered mix and ~1/4 cup of water. Still outstanding and you can find brown gravy in nearly every store in my area. Just as a thought for those who may be confused with the recipe and the use of 2 cubes of butter. When you watch video of the preparation, it clearly shows an amount equivalent to 2 tablespoons. My grocery store carries packages of butter in 1 tablespoon packets. It is a 1 pound package with 32 individual packets. This may be what the recipe author was referring to.

I made this last year and figured the butter/oil measurements were “off”. I used the same amount of meat, used 2 Tbsp each butter and oil and the combo was still too much ‘fat’…and I’m a butter lover!
I did not go out and buy Adobo, but made a mixutre of 1/4 tsp each: paprika, oregano, chili powder, onion powder, garlic powder and salt.
Instead of mixing the cornstarch with water I used equal amount of cream and 4-5 Tbsp cornstarch. The “Gravy Master” is undoubtedly what we in the western states call “Kitchen Bouquet”. It adds depth to any soup, stew, gravy.
Hubby is a “meat and potatoes” guy and we really loved this dish!
