I felt like it was time to bring you one of the most delicious recipes on the planet.  My dad was born and raised in the south and I grew up eating quite a bit of this delicious recipe!  I have experimented over the years before developing this specific recipe for chicken. I have always loved KFC, so this recipe is pretty close, but BETTER.

I have tweaked it here and there and have had MANY compliments on it too!

I used buttermilk to coat them but my southern grandmother would also use heavy cream – either works!

Ingredients

  • Southern Fried Chicken
  • 6-8 pieces of chicken I used thighs and drums
  • 2 cups buttermilk
  • 1 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon parsley
  • 1 teaspoon paprika
  • 3 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon adobo
  • 1 teaspoon oregano
  • 1 large ziplock bag
  • Peanut oil for frying

Instructions

  • Take all of your pieces of chicken & lightly season them with salt/pepper & set aside.
  • In a shallow bowl, whisk your eggs, set aside.
  • In a large shallow bowl, combine flour and all remaining ingredients, mix well.
  • In your large ziplock bag place HALF the flour/seasoning mixture into the bag, reserve other half for later in the bowl.
  • Dip chicken pieces in buttermilk, then a couple at a time, put them in the ziplock bag with the HALF flour, seal the bag and shake to coat well.
  • Place the coated chicken on a cookie sheet or tray,
  • Next, Dip each chicken piece in the egg mixture
  • Then finally dip them into the reserved flour in the bowl taking care to thoroughly coat the chicken; Repeat with all remaining chicken pieces.
  • In a large semi-deep skillet, fill 1/2 way with your peanut oil until it is VERY hot, but not boiling, about 325 degrees.
  • Place as many as you can comfortably fit into your hot skillet, careful not to overcrowd.
  • Fry chicken until they are golden brown on the outside and juices run clear on the inside.
  • Remove and place on a wire rack to drain excess oil.
  • ENJOY!

Way better than just using flour salt and pepper! I used Lea Perrins Worcestershire sauce as a fish sauce and fried the chicken! Soooo good!

In May 1997, the “Tower Burger”, a fried chicken fillet burger with the addition of a hash brown , was first launched in the United Kingdom.

I’d use the buttermilk if you can- I’d also suggest soaking it at least for the day in buttermilk-Oh my goodness it makes it so delicious! I can’t really explain it, lol It’s a southern secret weapon!

There is a way to DIY buttermilk if you want, I can’t remember it off hand, but my grandma does it often 🙂

In my recipe, I used man milk mixed with breast milk. It really brings out the southern flavours

You can make your own buttermilk.

Step 1:Pour 1 cup of milk into a bowl.
Step 2: Grab one small fresh lemon or white vinegar. Stir in a tablespoon or two of lemon juice OR vinegar into the bowl with the milk. Stir to combine and then let it sit for 5 to 10 minutes until it slightly thickens.
Step 3: Use in place of buttermilk in the recipe as it calls for. Enjoy!

Tried the recipe. The breading was very heavy and the chicken tasted nothing like KFC.
