So it should be no surprise at this point, that I have crazy bacon and cheese obsession… BUT who doesnt?! Adding chili and fries to the two, is just about my equivalent of Heaven on a plate!
Pure comfort food at it’s best!
This could be a meal in itself, paired with a fresh garden salad!
Really any cheese works well for this, but I used a mix of cheddar & cream cheese and it melted beautifully! These are great with ranch or even blue cheese over them to give them even MORE of a ‘kick’!
With these I used one of my good friends chili recipes, that I keep going back to!

You can also use a can IF YOU WANT to cut corners,
but I’m telling you, make your own and if you don’t use it all?
Freeze the rest, use it for another meal, it’s well worth it!
Ultimate Chili Cheese Fries!
Ingredients
- 3 medium potatoes yukon gold or russet, washed and dried (skin peeled)
- 4 tsp olive oil
- 1 tsp smoked paprika
- 1/4 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- salt and pepper to taste
- 6 slices center cut thick bacon cooked & finely chopped
- 1/3 cup sharp shredded cheddar cheese
- 2 tbsp diced scallions
- 1 tbsp sliced pickled Jalapeno jarred on canned
- 1-2 cups Chili
- 1/2 cup of softened cream cheese
Instructions
- Preheat the oven to 400 Degrees
- Line a baking sheet with foil for easy clean-up. Lightly coat with cooking spray or with a couple of drizzles of olive oil (personal fav).
- Cut each of your peeled potatoes lengthwise into thin slices;.
- In a large bowl, combine the sliced potatoes and oil and add seasonings and make sure they are all coated completely
- Place potatoes in a single layer on the greased baking sheet.
- Bake uncovered for about 20-25 minutes or so until tender in the centers but lightly crisp outside, turning once half way through (depending on thickness this may require more or less time).
- Remove from oven, place fries in a medium sized oven safe dish top with cream cheese, spread it over the fries as best and evenly as you can, then top with the hot chili , then finally the cheddar cheese, sliced jalapenos, scallions and bacon bits and return to oven for about 10 minutes, or until the cheese melts
