If you donโ€™t have an Instant Pot โ€” or simply want crispy skin without using a skillet โ€” you can make this recipe in the air fryer. I personally use the COSORI 6.8Qt Air Fryer (you can find it here), and it delivers perfectly golden, juicy chicken thighs every time.

Air Fryer Instructions:

  1. Preheat your air fryer to 375ยฐF.
  2. Season chicken as directed in the recipe.
  3. Place chicken thighs skin-side down in the air fryer basket (donโ€™t overcrowd).
  4. Cook for 10 minutes, flip, and cook an additional 8โ€“10 minutes, or until the internal temperature reaches 165ยฐF.
  5. While chicken is cooking, prepare the lemon butter sauce on the stovetop as directed in the Instant Pot recipe.
  6. Once chicken is done, toss it in the sauce or spoon sauce over the top before serving.

This method yields extra-crispy skin while still giving you that same rich, buttery, lemony flavor.

  3. In a large oven-safe skillet or your baking dish, melt butter and sautรฉ onions and garlic on the stovetop for 1โ€“2 minutes. Stir in lemon juice, zest, Italian seasoning, and broth.
  4. Add chicken thighs skin-side up to the dish, spoon some sauce over the top.
  5. Bake uncovered for 30โ€“35 minutes, or until chicken reaches 165ยฐF internally and skin is golden.
  6. For a thicker sauce, remove chicken to a plate and whisk in the cornstarch slurry, simmering on the stovetop until thickened. Return chicken to coat before serving.

This method creates a slightly more caramelized flavor and works beautifully when you want oven-roasted richness without pressure cooking.

Ingredients
  

  • 6 bone-in chicken thighs with skin
  • 4 garlic cloves minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 5 tablespoons butter
  • 1/2 cup chopped onion 1/2 small onion
  • 3 tablespoons lemon juice fresh squeezed
  • 1 tablespoon Italian seasoning
  • 1 tablespoon lemon zest
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Fresh chopped parsley optional
  • Lemon Slices optional

Instructions

  • Combine paprika, chili flakes, salt and garlic powder.
  • Rub the seasoning onto the skin of the chicken.
  • In the Instant Pot with the sautรฉ function, add 2 tablespoons of olive oil.
  • Add chicken thighs and cook on each side for 2-3 minutes until the chicken is golden brown. Remove chicken from the Instant Pot and set on a plate.
  • Add butter to the instant pot. Add the chopped onion and minced garlic. Sautรฉ for a minute. Add the lemon juice and deglaze the pan by scraping the bits off the bottom.
  • Add Italian seasoning, lemon zest and chicken broth. Stir to combine.
  • Put the chicken back into the Instant Pot. Put the lid on and lock. Turn the valve to sealing.
  • Set to cook for 7 minutes. When the pressure cooker is done, allow to naturally release for 5 minutes.
  • Turn the valve to release and allow all the steam to release. Push stop.
  • Unlock the lid and remove chicken to a clean plate and set aside.
  • In a small bowl, whisk together cornstarch and water. Add slurry to the juices in the Instant pot. Turn back to sautรฉ. Whisk and heat until the sauce thickens, about 5 minutes. Put chicken back into the pot, coating with the sauce. Serve.
