I am even a bigger fan of these cookies that are bites of carrot cake HEAVEN!
This is a from scratch recipe that uses real carrots and it is beyond delicious!

Carrot Cake Cookies w/ Orange Cream Cheese Frosting!
Ingredients
- 1/4 Cup softened butter
- 1/3 Cup Sugar
- 1/4 cup melted coconut oil
- 1 Tablespoon molasses
- 1 Tablespoon vanilla
- 1 Egg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 Cup flour
- 1/3 Cup pecans
- 1/2 Cup grated carrots
Frosting-
- 4 oz softened cream cheese
- 1/4 Cup softened butter
- 1 teaspoon vanilla
- 1 teaspoon orange zest
- 1 1/2 Cups powdered sugar
Instructions
- Preheat your oven to 350° and line a baking sheet with parchment paper
- In a large mixing bowl, mix together your butter and sugar
- Mix in your egg, vanilla, and molasses and coconut oil
- Now mix in your baking powder, salt, cinnamon, and flour
- Fold in your pecans and grated carrots
- Use a ice cream scoop to scoop out your dough onto your baking sheet
- Bake for 8-10 minutes, depending on the size of your cookies
- Once your cookies are cooled, frost and top off with a few more pecans and enjoy!
Frosting-
- In a large mixing bowl, mix together your cream cheese, butter, and vanilla
- Now mix in your orange zest and powdered sugar until you have a thick creamy frosting
