Dollywood Cinnamon Bread is one of those recipes that feels like pure comfort food from the very first bite. It is soft, buttery, sweet, packed with cinnamon sugar, and made with those deep pull apart sections that catch all of the gooey brown sugar and melted butter as it bakes.

This homemade version starts with frozen bread dough, which makes it so much easier than making yeast dough completely from scratch. Once the dough is thawed and risen, you cut deep slits across the top, fill everything with cinnamon sugar and butter, and bake it until the loaf is golden on the outside and soft in the middle.

The best part is the texture. The outside gets beautifully caramelized while the inside stays fluffy and tender, and every pull apart section has that warm cinnamon sugar tucked into it. Add the simple glaze on top and it really does feel like a special bakery style treat right from your own kitchen.

What is Dollywood Cinnamon Bread?

Dollywood Cinnamon Bread is a sweet pull apart style bread inspired by the famous cinnamon bread served at Dollywood. It is known for its soft yeast bread, deep cinnamon sugar flavor, buttery coating, and gooey caramelized edges.

Instead of rolling the dough up like traditional cinnamon rolls, the loaf is left whole and cut with deep slits across the top. Those cuts give the cinnamon sugar mixture somewhere to settle, which is what creates those soft pull apart sections throughout the loaf.

This recipe uses frozen bread dough as a shortcut, which makes the whole process much more manageable. You still get that warm, fresh baked bread texture, but without having to mix and knead yeast dough from scratch.

Why You’ll Love This Recipe

It is much easier than homemade yeast bread. Frozen bread dough does most of the hard work for you.

The texture is incredible. The center stays soft and fluffy while the edges become buttery, caramelized, and slightly sticky.

It tastes like a bakery treat. Cinnamon, brown sugar, and melted butter come together into that classic warm cinnamon bread flavor.

It is perfect for sharing. This loaf pulls apart easily, making it great for breakfast, brunch, holidays, or dessert.

The glaze is optional. It is already sweet and delicious without it, but the simple powdered sugar glaze makes it feel extra special.

The ingredients are simple. You only need a handful of basics, and most of them are probably already in your pantry.

Why This Recipe Works

The frozen bread dough gives you a soft, reliable base without making the recipe complicated. Once it is fully thawed and risen, the dough has enough structure to hold all of that melted butter and cinnamon sugar while still baking up light and fluffy.

The deep cuts are what really make this recipe work. They allow the butter, brown sugar, and cinnamon to get down inside the loaf instead of just sitting on top. That means every section has flavor all the way through.

Using both granulated sugar and brown sugar gives the bread a better texture and deeper flavor. The granulated sugar adds sweetness, while the brown sugar melts into the butter and creates those sticky, almost caramel like areas between the layers.

Letting the loaf rest before baking also gives the dough a little more time to relax and rise, which helps keep the finished bread tender instead of dense.

Ingredient Breakdown: What They Do

Frozen Bread Dough: This is the base of the recipe and the biggest shortcut. Once thawed and risen, it gives you a soft yeast bread texture without having to make dough from scratch.

Granulated Sugar: This adds sweetness and helps create that classic cinnamon sugar flavor throughout the loaf.

Brown Sugar: Brown sugar adds moisture, richness, and a deeper caramel flavor. It also helps create the gooey edges between the pull apart sections.

Ground Cinnamon: Cinnamon is the main flavor in this bread and gives it that warm bakery style taste.

Unsalted Butter: Melted butter helps the sugar mixture stick to the loaf and keeps everything rich, soft, and flavorful.

Powdered Sugar: This is used for the optional glaze and gives you a smooth, sweet finish.

Milk: Milk thins the powdered sugar into a drizzleable glaze. You can add a little more if you want a thinner consistency.

When to Serve Dollywood Cinnamon Bread

Dollywood Cinnamon Bread is perfect for breakfast, brunch, holidays, or anytime you want something warm and sweet.

It is especially good on Christmas morning, Thanksgiving morning, Easter brunch, or a cozy weekend breakfast when you want something that feels special without spending all morning in the kitchen.

You can also serve it as a dessert with coffee or hot chocolate. It is rich enough to feel like a treat, but still has that soft bread texture that makes it work beautifully with breakfast foods.

For serving ideas, try it with scrambled eggs, bacon, sausage, fresh berries, yogurt, coffee, tea, or a simple fruit salad. If you are serving it for dessert, a scoop of vanilla ice cream on a warm slice would be amazing too.

Make Ahead, Storage & Freezing Tips

You can make part of this recipe ahead of time by thawing the frozen bread dough in the refrigerator overnight. Then let it sit at room temperature until it has risen properly before continuing with the recipe.

You can also prepare the loaf through the slitting and cinnamon sugar stage, cover it, and refrigerate it for a short period before baking. Just make sure the dough has enough time to warm up and rise slightly before going into the oven.

Store leftover Dollywood Cinnamon Bread in an airtight container at room temperature for up to 2 days. If you want it to last longer, refrigerate it for up to 5 days.

To reheat, warm individual slices in the microwave for about 10 to 15 seconds. You can also wrap the loaf loosely in foil and warm it in a low oven.

For freezing, let the bread cool completely, wrap it tightly in plastic wrap and foil, and freeze for up to 2 months. Thaw overnight in the refrigerator or at room temperature before reheating.

If you plan to freeze it, I recommend freezing it without the glaze and adding fresh glaze after reheating.

Variations & Substitutions

Add Chopped Pecans: Sprinkle chopped pecans between the slits before baking for extra crunch.

Add Walnuts: Walnuts work just as well and give the loaf a slightly different flavor.

Use Maple Glaze: Replace some of the milk in the glaze with maple syrup for a warm maple cinnamon version.

Add Vanilla to the Glaze: A small splash of vanilla extract makes the glaze taste even more bakery style.

Use Pumpkin Pie Spice: Replace part of the cinnamon with pumpkin pie spice for a fall version.

Add Raisins: Tuck a few raisins into the cuts for a cinnamon raisin bread variation.

Use Salted Butter: Salted butter can be used if that is what you have. Just expect a slightly saltier flavor.

Skip the Glaze: The bread is plenty sweet without it, especially if you prefer a less sugary finish.

Leftover Ideas

Leftover Dollywood Cinnamon Bread is delicious reheated just as it is, but there are a few fun ways to use it.Cut leftover slices into cubes and turn them into bread pudding. The cinnamon and brown sugar flavor makes it perfect for that.

You can also use thick slices for French toast. Dip them in an egg and milk mixture, cook them in a skillet, and serve with syrup or powdered sugar. Another idea is to cut leftover bread into bite sized pieces, warm them slightly, and serve them with vanilla ice cream for a quick dessert. If you only have a small amount left, toast it lightly and spread it with butter, cream cheese, or apple butter.

Dollywood Cinnamon Bread FAQ

Can I use frozen bread dough for Dollywood Cinnamon Bread?

Yes, and that is exactly what makes this version so easy. Frozen bread dough gives you the soft texture of homemade yeast bread without having to measure yeast, knead dough, or wait through multiple complicated rise stages.

The important thing is making sure the dough is fully thawed and has risen before you start adding the cinnamon sugar mixture. If the dough is still cold or dense, it may not bake up as light and fluffy.

How long does frozen bread dough take to thaw?

Most frozen bread dough takes about 4 to 6 hours at room temperature to thaw and rise, although exact timing depends on the brand and temperature of your kitchen.

You can also thaw it overnight in the refrigerator and then let it sit at room temperature until it has doubled in size. Always follow the package directions for the specific dough you are using.

Why do I need to cut deep slits in the bread?

The slits allow the cinnamon sugar and butter mixture to get deep inside the loaf.

If you only brush everything on top, most of the flavor will stay on the surface. By cutting deep slits without cutting all the way through, you create those pull apart sections that hold the gooey cinnamon filling.

How deep should I cut the slits?

Cut about 5 to 6 deep slits across the loaf, stopping before you reach the bottom.

You want the loaf to stay connected so it still bakes as one piece. If you cut all the way through, the sections may separate too much during baking.

Why does the dough need to rest after adding the butter mixture?

That rest time gives the dough a chance to relax and puff slightly before baking.

It also helps the cinnamon sugar mixture settle into the cuts, which creates a better finished texture.

Can I make Dollywood Cinnamon Bread without the glaze?

Absolutely. The bread is already sweet and buttery on its own.

The glaze is just an extra finishing touch. If you prefer a less sweet version, skip it completely.

How do I know when Dollywood Cinnamon Bread is done?

The loaf should be golden brown on top and cooked through in the center.

Because bread can brown before the middle is completely done, you may want to check the center with a thermometer. Fully baked bread is usually around 190°F to 200°F internally.

If the top is browning too quickly, loosely cover it with foil and continue baking until the center is done.

Why is my bread doughy in the middle?

The loaf may simply need more baking time.

Frozen bread dough can be thick, especially if it did not fully rise before baking. If the outside looks done but the center is still doughy, cover the top loosely with foil and bake a little longer.

Can I make Dollywood Cinnamon Bread ahead of time?

Yes. The easiest way is to thaw the dough overnight in the refrigerator and finish the recipe the next day.

You can also bake the bread a few hours ahead and gently reheat it before serving. It is best served warm because the butter and brown sugar are softer and gooier.

Can I use homemade bread dough instead?

Yes. A soft white yeast bread dough or brioche style dough would work well.

Just make sure you are using about 1 pound of dough so the baking time stays reasonably close to the recipe.

Can I use cinnamon roll dough instead?

You could experiment with it, but the result would be different. Cinnamon roll dough is usually richer and already contains sugar and fat.

For the closest result to this recipe, frozen white bread dough works best.

Can I double this recipe?

Yes. I recommend making two separate loaves rather than one extra large loaf.

Two standard loaves will bake more evenly and give you more of those caramelized edges.

Can I bake Dollywood Cinnamon Bread in a different pan?

Yes. A standard loaf pan works best, but you can also use a similar sized baking dish.

Just keep an eye on the baking time because a wider, shallower pan may bake a little faster.

Can I add extra cinnamon?

Yes, especially if you really love cinnamon.

You can increase it slightly, but I would not add too much because cinnamon can become bitter when heavily concentrated.

Can I make the glaze thicker?

Yes. Add a little more powdered sugar.

If you want a thinner glaze, add milk a few drops at a time until it reaches the consistency you like.

  • Granulated Sugar: About $0.10 since you only use a small amount.
  • Brown Sugar: About $0.25 to $0.40 depending on brand.

  • Unsalted Butter: About $0.60 to $1.00 depending on current butter prices.

  • Estimated Total Cost: About $3.50 to $5.50 for the whole loaf.

Lightened Up Dollywood Cinnamon Bread

This is definitely a sweet treat, but there are a few ways to lighten it up if you want.

You can reduce the amount of brown sugar slightly and still keep plenty of cinnamon flavor.

You can also use a little less butter, although I would not remove too much because the butter is what gives the bread that rich texture.

Skipping the glaze is probably the easiest way to reduce added sugar without changing the bread itself.

Another option is serving smaller slices. Since the bread is rich and sweet, a little goes a long way.

Troubleshooting Tips

My dough did not rise: Make sure it was fully thawed and kept in a warm area. Cold kitchens can slow the rise considerably.

My bread is doughy in the center: It needs more baking time. Cover the top loosely with foil and continue baking until the center is done.

The top is too dark: Cover the loaf with foil during the last part of baking.

The cinnamon sugar is falling off: Make sure the melted butter mixture gets brushed into the slits before sprinkling the remaining brown sugar.

My loaf pulled apart too much: The cuts were probably too deep. Make sure you leave the bottom of the loaf connected.

The bread seems dry: It may have been overbaked. Start checking it a few minutes before the full baking time.

My glaze is too thick: Add milk a few drops at a time.

My glaze is too thin: Add more powdered sugar until it thickens.

My Personal Kitchen Notes

The biggest thing with this Dollywood Cinnamon Bread is making sure the frozen bread dough is completely thawed and has had enough time to rise before you start. If you rush that part, the finished loaf can turn out heavier and denser instead of soft and fluffy. When cutting the slits, use a sharp knife and cut fairly deep, but be careful not to go completely through the bottom because you want the loaf to stay together.

I really like getting the cinnamon butter mixture down inside every one of those cuts instead of just brushing it over the top because that is what gives you those gooey cinnamon sugar pockets throughout the bread. Make sure to sprinkle the remaining brown sugar down into those sections too.

I also recommend keeping an eye on the loaf during the last 10 minutes of baking. If the top is getting beautifully golden but the center still needs a little more time, loosely cover it with foil and let it finish baking. Give the bread a few minutes to cool before adding the glaze so it drizzles over the top instead of completely melting into the hot loaf.

My Final Thoughts

Dollywood Cinnamon Bread is one of those recipes that feels like a special bakery treat but is surprisingly simple to make at home, especially since frozen bread dough does most of the hard work for you. I love the combination of the soft, fluffy bread with all of that buttery cinnamon sugar tucked down into the pull apart sections, and those slightly caramelized edges are probably my favorite part.

The simple glaze makes it even better, but honestly, this bread is delicious enough to eat warm right out of the pan without anything else added. It is perfect for holiday mornings, weekend brunches, family breakfasts, or even dessert with a cup of coffee. If you love cinnamon rolls and warm pull apart breads, this is definitely one of those recipes worth saving because it gives you all of those cozy cinnamon bakery flavors without having to make homemade yeast dough from scratch.
