Ingredients Needed

Flour – Make sure to scoop the flour into the measuring cup. Then level it off.

Oats – Old fashioned oats are going to offer a really nice chewy texture to the cookie bars.

Baking Soda – This will help the cookie bars rise and create the perfect soft and chewy texture.

Salt – Salt is a must when you bake. It is going to bring life to the cookies and ballance the sweet flavors.

Butter – Unsalted butter that is room temperature. Make sure if you use salted butter you leave out the salt in the bar recipe.

Peanut Butter – I prefer creamy peanut butter. But feel free to swap to a crunchy peanut butter if you want.

Sugar – Brown sugar and granulated sugar are both used. It really elevates the whole vibe of the cookie bars.

Egg – Room temperature eggs will mix in better to the batter ensuring they are fully incorporated.

Vanilla – A splash of vanilla really brings out more flavor to the whole dessert.

M&M’s – If you can get your hands on the Halloween Ghoul’s M&M’s give them a try. They are bright Halloween colors!

Peanut Butter Chips – You find these in the baking aisle and they are so good in these bars.

Chocolate Chips – I used semi-sweet but milk chocolate or even a dark chocolate can work just as good.

Candy eyeballs – These are found in the baking aisle. They just really elevate the level of Halloween I think to give it a monster vibe.

Variations to Recipe

  • Mix in chopped candy bars or leftover Halloween candy!
  • Swap out the chocolate chips with a white chocolate chip or even butterscotch.
  • Use a nut butter instead of peanut butter.
  • Quick oats can be used. The cookie bars just won’t be as chewy.
  • Use browned butter in replace of regular butter in the recipe for a richer and nutty flavor.
  • Decorate with crushed cookies, Halloween candy, etc.
  • Drizzle on melted candy melts on top of the bars for a twist in design.
  • Do 1/2 teaspoon of pumpkin spice seasoning for a fall flavor.
  • Swirl on some salted caramel sauce for a gooey twist.
  • Toss in 1/3 cup of shredded coconut for added chewy texture.
  • 1/2 cup of nuts can be added. Chopped pecans are a great additon.
  • Mix in dried raisins or cranberries for a sweet fruity twist.

Tips for Success

Cream Sugar and Butter

Taking time to cream the butter and sugar for 2-3 minutes is going to transform the texture but also richen the flavor of the cookie bars. You will get a nice light and fluffy texture.

Fold In The Candies

Make sure to fold in the chocolate chips and M&M’s. If you use a hand or stand mixer it will break up the candies and you wont have that gorgeous finished look.

Don’t Over Bake

Watch the cookie bars and make sure to not overbake. Otherwise it can leave your cookies a bit dry. use the cook time as a guide. Depending on elevation, humidity, etc. the cook time can vary.

Room Temperature Ingredients

Using room temperature ingredients like butter and eggs is going to help ensure all the ingredients incorporate properly. So make sure to take time to set them out before you go to baking.

Lining Pan

Lining the pan with parchment paper is going to help give you an easy way to get the bars out without them breaking. Leave room at the top so you can grab the paper and lift up once the bars have cooled.

Topping With Candies

When you go to bake adding extra candies right on top of the bars is going to give you a gorgeous look like a bakery. Just lighly press the M&M’s and such into the top of the dough.

Clean Cuts

Make sure your bars are fully cooled before you go to slice in them if you want that gorgeous clean cut. Then use a sharp knife for even slice strokes for that nice smooth look. If you slice while still hot you get crumbles.

Storing

Room Temperature: Store the bars in a sealed airtight container at room temperature for around 4-5 days. The longer the bars sit the drier they will become. But you can soften them up a bit by microwaving. Just place a bar in the microwave and heat for 10 seconds or so. Once warm remove and enjoy.

Freezing: You can also freeze any of the bars you don’t plan to eat. Place in a freezer bag or container and freeze for 2-3 months. Thaw on the counter and enjoy.

FAQs

Can I use store-bought cookie dough for Monster Cookie Bars?

You could use store bought cookie dough as the base. I would recommend using a chocolate chip cookie. Then add in some oats, peanut butter chips, and M&M’s. Just know the texture will be different and flavor.

How do I prevent the bars from becoming too soft or crumbly?

Make sure you mix and fully bake your cookie bars. A lot of times if your bars fall apart they were not fully cooked and can begin to crumble.

Can I use gluten-free flour for Monster Cookie Bars?

Go right ahead and use a gluten free flour if you want. Just know depending on the flour you might need to adjust the recipe slightly.

Can I add a frosting to the bars?

Go right ahead and reach for a canned frosting or make a homemade frosting and spread on top. Then decorate the top of bars with sprinkles, candy eyes, and M&M’s.

Halloween Monster Cookie Bars are a homemade monster cookie bar recipe. Made with chocolate chips, peanut butter, oats, M&M candies and more. A sliceable thick and chewy cookie bar with a Halloween theme.

Ingredients
  

  • 2 cups all-purpose flour 250 grams
  • 1 ยฝ cups old-fashioned oats 120 grams
  • 1 teaspoon baking soda
  • ยผ teaspoon salt
  • ยฝ cup unsalted butter room temperature (113 grams)
  • ยฝ cup creamy peanut butter 128 grams
  • ยฝ cup granulated sugar 100 grams
  • ยฝ cup brown sugar lightly packed (100 grams)
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 cup Ghoul mix M&Mโ€™s divided (165 grams)
  • ยฝ cup semi-sweet chocolate chips divided (85 grams)
  • ยฝ cup peanut butter chips divided (120 grams)
  • Candy eyeballs to decorate optional

Instructions

  • Preheat the oven to 350 degrees F. Line the bottom and sides of a 9×9 inch baking pan with parchment paper and set aside.
  • Whisk together the flour, oats, baking soda, and salt in a medium bowl and set aside.
  • In a large bowl, beat the butter, peanut butter, and sugars with a hand or stand mixer until light and fluffy.
  • Scape the sides of the bowl and beat in the eggs and vanilla until well combined.
  • Scrape the bowl again and add the flour and oat mixture. Mix until just combined, do not overmix.
  • Set aside ยผ cup of M&Ms and two tablespoons each of the chocolate and peanut butter chips. Fold the remaining M&Ms, chocolate, and peanut butter chips into the cookie dough.
  • Turn the cookie dough into the prepared pan and gently press into an even layer smoothing the top with a rubber spatula or the back of a spoon.
  • Scatter the M&Ms, chocolate, and peanut butter chips that you set aside over the top of the cookie dough and gently press down.
  • Bake for 22-28 minutes or until the edges have set and a toothpick inserted into the center comes out clean.
  • Press the candy eyeballs into the cookie bars while they are warm, then allow them to cool completely in the pan before removing and cutting them into squares.
