Ingredients
  

For the biscuits:

  • 3 cups self-rising flour
  • 1 Tablespoon sugar
  • 7 Tablespoons cold unsalted butter cubed
  • 1 1/4 cup butter milk
  • 1 teaspoon kosher salt

For the chicken:

  • 1 1/2 pounds chicken tenderloins skinless and trimmed
  • 2 large eggs beaten
  • 1/3 cup all purpose flour
  • 1 cup seasoned panko bread crumbs
  • 2 teaspoons lemon zest
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

For the butter:

  • 1/2 butter softened
  • 3 Tablespoons honey
  • 2-3 dashes of hot sauce Cajun or Tabasco
  • Sliced dill pickles for serving

Instructions

For the biscuits:

  • Preheat the oven to 425°
  • Spray a cookie sheet with a non-stick cooking spray.
  • In a mixing bowl combine the flour, sugar, and salt.
  • Work in the butter quickly, until it is incorporated in the flour.
  • Stir in the buttermilk until soft dough forms.
  • Lightly flour a work surface, then place your dough on the flour and roll out until 1 inch thick.
  • Using a biscuit cutter, cut out your biscuits and place on the pan.
  • Place in the oven and bake for 15 – 20 minutes until golden brown.

For the chicken:

  • Spray your airfryer basket with a non-stick cooking spray.
  • Cut off any excess fat on the chicken, and pat dry.
  • In a shallow dish add the slightly beaten eggs.
  • In a separate shallow dish, combine the flour, kosher salt, black pepper, and smoked paprika.
  • In another shallow dish, add the seasoned bread crumbs and lemon zest.
  • Dip the chicken in the flour mixture first and coat well, then in the eggs, then press into bread crumbs, making sure to coat the chicken well.
  • Repeat until all of your chicken is coated.
  • Place the coated chicken in the airfryer basket, and spray each chicken piece with olive oil or cooking spray.
  • Return your airfryer basket to the airfryer base and set your airfryer to 375° for 10 minutes.
  • Flip your chicken and spray with the non-stick spray and fry for 5 more minutes.

For the butter:

  • In a small bowl, add the butter, honey, and your favorite hot sauce.
  • Mix until smooth.

To assemble:

  • Cut the biscuits open, and slather both sides with the honey butter.
  • Add a piece or two of chicken, some pickles and serve!
  • Enjoy!
