Snickerdoodle Cobbler
Ingredients
- 1 17.5oz. package snickerdoodle cookie mix
- 1/2 cup 1 stick salted butter
- 1 large egg
- 1 21oz. can apple pie filling
- 3 Tbsp. caramel topping
- 2 tsps cinnamon sugar
Instructions
- Preheat oven to 375F and spray an 8" baking dish with non-stick cooking spray.
- In a small bowl, mix together cookie mix, butter, and egg.
- Place half on the dough in small spoonfuls across the bottom of the prepared baking dish.
- Sprinkle dough with 1 tsp of cinnamon sugar.
- Spread apple pie filling over the bottom layer and add remaining cookie mix in small spoonfuls across the top.
- Sprinkle with the second tsp of cinnamon sugar and top with a drizzle of caramel topping.
- Bake for 30 to 35 minutes.
- Top with Ice cream and Enjoy!

This made a repeat appearance tonight, but with an unintentional twist. I thought I had a snickerdoodle cookie mix on hand. Instead I had Oatmeal. I thought “what do I have to lose?’ and went ahead with it. (I keep cinnamon sugar on hand so no problem with that.) Try it with the Oatmeal Cookie mix…..it is amazing!

OK here’s my problem, maybe you think about people like me who only cook from scratch and make the very best sought after snickerdoodle cookies ever! I don’t do packaged mixes and never will when it comes to baking. So maybe take some time to make an actual “REAL” snickerdoodle cobbler using homemade snickerdoodle cookie recipe, along with homemade caramel sauce, not store bought, as well as homemade apple pie. I also make the best apple cake and apple cobbler as far as my hubby, his family and our friends are concerned, and all from scratch! When it comes to baking, real bakers don’t ever take shortcuts! So I would love to make something like this without sugar loaded crap bought in the supermarket. Oh and just for reference, unless you cater to only the US, then I would suggest you take this down and make yourself an ONLY US site which the world wide web can’t get to, because NO ONE but the US carries that crap in stores, I know for a fact that Europe sure the hell doesn’t!
