Strawberry Cake Mix Cookies with Strawberry Lemon Glaze

Ingredients
  

Yields: 23 cookies

Ingredients:

  • 1 box of strawberry cake mix I used betty crocker
  • 2 eggs
  • 1/4 cup canola oil or vegetable oil
  • 1 teaspoon pure vanilla extract

Strawberry Lemon Glaze Ingredients

  • 2 cups powdered/confectioners sugar
  • 1/3 cup strawberries chopped
  • 1 tablespoon lemon juice or water

Instructions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, combine the strawberry cake mix, eggs, oil, and vanilla together and mix well (you can use a fork or a hand mixer).
  • Line a baking sheet with parchment paper and create 1 tablespoon cookie dough balls with a cookie scoop and put the cookies about 2” apart on the baking sheet.
  • Bake for 10 minutes - or until the edges start to brown. Do not over bake.
  • Remove from the oven and let the cookies cool on the baking sheet while you make the glaze.
  • To make the glaze, blend strawberries and lemon juice together in a food processor or blender.
  • Add strawberry mixture to powdered sugar and mix until smooth (if the glaze is too thin, add powdered sugar. If it’s too thick, add more lemon juice or water).
  • Transfer cookies to a cooling rack and spoon glaze on top of cookies.
  • Once cooled, sprinkle with powdered sugar (optional).
  • ENJOY!

Notes:

  • Feel free to skip the glaze and just sprinkle cookies with powdered sugar after they cool.
  • For the glaze, blend the strawberries to a puree, or leave larger chunks.

    I just made this recipe and it was both delicious and so simple! I think I’ll play around with the glaze next time and leave the strawberries chunkier but there were a huge hit with everyone who tried them. Can’t wait to make this recipe again!
