Strawberry Rhubarb Cobbler
Ingredients
Servings: 6
- 4 cups fresh strawberries- chopped
- 2 cups fresh rhubarb- sliced
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1 egg
- 1 stick + 2 tablespoons butter
Instructions
- Preheat your oven to 375 degrees/F and prepare a 9x12 (you can also use a 9x9) baking dish by spraying with non-stick spray.
- Prepare your strawberries and rhubarb and place in an even layer on the bottom of the baking dish.
- In a medium bowl, add the flour, sugar, cinnamon, baking powder, and egg and mix until you get a crumble. I found it was easier to mix with my hand.
- Sprinkle the crumble over top the strawberries and rhubarb in an even layer.
- Slice the butter into thin pats and place over the top of the crumble in an even layer.
- Bake for 40-45 minutes until the top is golden brown.
- Remove from the oven and serve while warm with a scoop of vanilla ice cream.
