Strawberry Rhubarb Cobbler

Ingredients
  

Servings: 6

  • 4 cups fresh strawberries- chopped
  • 2 cups fresh rhubarb- sliced
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1 stick + 2 tablespoons butter

Instructions

  • Preheat your oven to 375 degrees/F and prepare a 9x12 (you can also use a 9x9) baking dish by spraying with non-stick spray.
  • Prepare your strawberries and rhubarb and place in an even layer on the bottom of the baking dish.
  • In a medium bowl, add the flour, sugar, cinnamon, baking powder, and egg and mix until you get a crumble. I found it was easier to mix with my hand.
  • Sprinkle the crumble over top the strawberries and rhubarb in an even layer.
  • Slice the butter into thin pats and place over the top of the crumble in an even layer.
  • Bake for 40-45 minutes until the top is golden brown.
  • Remove from the oven and serve while warm with a scoop of vanilla ice cream.
  • ENJOY!
