Bacon Wrapped Meatloaf
Ingredients
- 2 lb ground beef
- ¼ cup ricotta cheese
- ¼ cup heavy cream
- 1 tbsp worcheshire
- 1 tsp kosher salt
- ½ tsp coarse ground black pepper
- ½ tsp onion powder
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp Italian seasoning
- 1 tbsp fresh chopped parsley
- 1 egg
- 1 white onion diced and divided
- 1 lb bacon
- Salt and pepper to taste
- 3 tbsp unsalted butter
- 1 tbsp brown sugar
- 1 tbsp white vinegar
- ½ cup ketchup
- Chives as garnish
Instructions
- Preheat the oven to 350*
- In a large mixing bowl, combine ground beef, ricotta, cream, worcheshire, salt, pepper, onion powder, chili powder, paprika, Italian seasoning, chopped parsley, egg, and ½ of the diced onion. Use your hands to help thoroughly mix. Form into a loaf.
- Drape bacon over the meatloaf in a shingle pattern until fully covered. Tuck the ends of the bacon under the meatloaf. Season the top with a pinch of salt and pepper.
- Lightly spray a 9×5 pan with non-stick cooking spray. Place meatloaf into the pan and set in the oven uncovered on the middle rack. Bake for 55 minutes.
- Heat a skillet over medium-low heat. Melt the butter, and add remaining diced onions to the skillet. Sprinkle brown sugar over the onions and sauté for 15 minutes. Stir in the white vinegar and ketchup and lower the heat to simmer. Cook for 10 minutes and set aside.
