Not only is this cake full of rich chocolate, but it’s also packed full of one of my other favorite things…Baileys Irish Cream! Which I havent been able to have for the past year because I was pregnant with my daughter!
I was dying to make this cake again and share it here on the blog with you all!
This cake is made from scratch and so is the amazing kahlua buttercream frosting that I top it and layer it with, I have to stop myself from eating it with a spoon because its so good! LOL its my all time favorite cake!
Delicious kahlua buttercream really makes this cake a winner and compliments the cake perfectly. With such a rich cake, the frosting is the perfect way to finish it off! The whole combination is pure heaven and a cake I’ll definitely be making again and again – now that I can drink alcohol again 😀
This is an ‘adult’ cake but if you wanted to make it ‘kid-friendly’ you can use the Baileys Irish cream coffee creamer, it’s non alcoholic and it has close to the same taste. Substitute the Kahlua for more of the baileys creamer in the frosting as well!Â
You know, for someone who doesn’t really drink, I love boozy desserts. But you will catch me frequently having a glass of sweet dessert wine or a sweet cocktail, but you’ll never catch me with a beer…ever. lol This cake is scrumptious and sure to be a huge hit with whoever you serve it to!Â

Bailey's Irish Cream Chocolate Cake with Kahlua Buttercream
Ingredients
Makes: 12 slices
Cake
- 1 cup unsalted butter softened to room temperature
- 2 1/2 cups granulated sugar
- 4 large eggs room temperature
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsweetened cocoa powder
- 2 1/4 cups Baileys Irish Cream
Kahlua Buttercream Frosting
- 1 cup unsalted butter softened to room temperature
- 4 cups powdered sugar
- 1 teaspoon vanilla
- 3 tablespoons kahlua

Instructions
- Preheat oven to 350 degrees.
- Grease and flour the cake pans and then line the bottom of the pans with round parchment paper for easier removal.
- Cream the butter and sugars in a large mixing bowl. Add in the eggs one at a time and blend with a handheld mixer.
- Add in the vanilla and mix to combine.
- Combine flour, baking soda, baking powder, salt and cocoa powder in a large bowl.
- Alternating between the two, slowly add the dry ingredient mixture and Baileys to the bowl with the butter and sugar. Mix on low speed to combine ingredients.
- Divide the cake batter evenly between the three cake pans.
- Bake 22-28 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Cool and then remove the top of each cake with a cake leveler.
- Mix the frosting by creaming the butter and powdered sugar. Add in the vanilla and kahlua, mixing with a hand-held mixer on low speed.

This has become my family’s favorite cake! And mine 🙂
It is the perfect combination, the only thing I changed was that I used half of the butter for the frosting and a bit more Kahlua and added a pinch of cocoa.
But either way it is the best cake ever!
