Recipe Notes & Tips

  1. If you notice that your glaze has some cream cheese clumps in it, use a wooden or rubber spatula and press the lumps against the bowl to help mash them into the mixture.

  2. Make sure that you’re not overmixing the cake batter after you’ve added the flour to it. If you overmix, it makes the gluten overdevelop, which means that the cake won’t have that light, fluffy texture that you desire.
    If you’re not a fan of glaze on your cake, you can always omit it from this recipe and just sprinkle a bit of powdered sugar on top

Banana Cake

Ingredients
  

Prep time: 20 minutes

Bake time: 65 minutes

Servings: 12 slices

Cake:

  • 2 1/2 c flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 3/4 c sugar
  • 1/2 c butter room temperature
  • 1/4 c brown sugar
  • 2 eggs + 2 yolks
  • 1 1/2 c mashed banana
  • 1 c sour cream
  • 2 tsp vanilla

Glaze:

  • 1 c powdered sugar
  • 4 oz cream cheese
  • 1/4 c sour cream
  • 2 tsp vanilla
  • 1/2 tsp salt

Instructions

  • Preheat the oven 350 F.
  • Grease and flour a bundt pan and set aside.

To make the cake

  • whisk together the flour, baking powder, salt and baking soda in a medium sized bowl. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, beat together the sugar, butter and brown sugar until fluffy and lighter in color, about 2 minutes.
  • Add in the eggs and beat together for 45 seconds.
  • Next, add in the mashed banana, sour cream and vanilla and mix until fully incorporated.
  • Add in the flour mixture and stir just until the flour has been incorporated.
  • Pour the cake batter into the prepared bundt pan and smooth out.
  • Place the pan into the oven to bake for 65 minutes or until a toothpick inserted comes out clean or with slightly moist crumbs.
  • Once baked, remove the pan from the oven and place onto a cooling rack or hot pad to cool.
  • While the cake is cooling, make the glaze.

GLAZE

  • Add all of the ingredients to the bowl of a stand mixer fitted with a paddle attachment.
  • Beat together on high speed for 2-3 minutes or until a smooth glaze has formed.
  • Once the cake has cooled, turn the pan over onto a cake stand or serving plate.
  • Gently tap the bundt pan to aid in releasing the cake.
  • Pull the bundt pan up off of the cake.
  • Let the cake finish cooling completely.
  • Spoon the glaze onto the cake and let it run down the sides of the cake.
  • Slice and serve & ENJOY!
