Banana Cake
Ingredients
Prep time: 20 minutes
Bake time: 65 minutes
Servings: 12 slices
Cake:
- 2 1/2 c flour
- 2 tsp baking powder
- 1 tsp salt
- 1/4 tsp baking soda
- 3/4 c sugar
- 1/2 c butter room temperature
- 1/4 c brown sugar
- 2 eggs + 2 yolks
- 1 1/2 c mashed banana
- 1 c sour cream
- 2 tsp vanilla
Glaze:
- 1 c powdered sugar
- 4 oz cream cheese
- 1/4 c sour cream
- 2 tsp vanilla
- 1/2 tsp salt
Instructions
- Preheat the oven 350 F.
- Grease and flour a bundt pan and set aside.
To make the cake
- whisk together the flour, baking powder, salt and baking soda in a medium sized bowl. Set aside.
- In the bowl of a stand mixer fitted with a paddle attachment, beat together the sugar, butter and brown sugar until fluffy and lighter in color, about 2 minutes.
- Add in the eggs and beat together for 45 seconds.
- Next, add in the mashed banana, sour cream and vanilla and mix until fully incorporated.
- Add in the flour mixture and stir just until the flour has been incorporated.
- Pour the cake batter into the prepared bundt pan and smooth out.
- Place the pan into the oven to bake for 65 minutes or until a toothpick inserted comes out clean or with slightly moist crumbs.
- Once baked, remove the pan from the oven and place onto a cooling rack or hot pad to cool.
- While the cake is cooling, make the glaze.
GLAZE
- Add all of the ingredients to the bowl of a stand mixer fitted with a paddle attachment.
- Beat together on high speed for 2-3 minutes or until a smooth glaze has formed.
- Once the cake has cooled, turn the pan over onto a cake stand or serving plate.
- Gently tap the bundt pan to aid in releasing the cake.
- Pull the bundt pan up off of the cake.
- Let the cake finish cooling completely.
- Spoon the glaze onto the cake and let it run down the sides of the cake.
- Slice and serve & ENJOY!
