What Is a Blueberry Cream Cheese Loaf?

The Blueberry Cake is a type of dessert loaf that consists of fresh blueberries, vanilla extract, cream cheese, lemon juice, and other essential baking ingredients. Once you bake it, you can slice it into individual serving pieces. You can grab a slice while on the go and eat it for breakfast or a snack. It is sweet, wholesome, and fulfilling.

Ingredients Needed for Blueberry Cream Cheese Loaf

Besides the blueberries, lemon juice, vanilla, and cream cheese, you will need some baking essentials. The essentials include unsalted butter, sugar, baking powder, baking soda, salt, milk, eggs, and all-purpose flour. When combined, you can use these ingredients to create a unique blueberry loaf cake with a citrus-like taste that will blow you away.

Can You Use an Alternative Ingredient for the Cream Cheese?

If you do not have cream cheese or do not want to use it in this recipe, there are plenty of great alternatives worth trying with this recipe. You can use mascarpone, cottage cheese, or ricotta cheese in this recipe. If you would prefer a dairy-free option, try Miyoko’s vegan cream cheese. It has a naturally great taste and is safe to use in this recipe.

Can You Make Muffins Instead of a Loaf with the Recipe?

Besides using this recipe to prepare the blueberry bread loaf, you can add your loaf mixture to a muffin pan. You may prefer to make muffins instead of a loaf of bread because it is easier to grab one while on the go. You would not even have to worry about slicing the bread into pieces to create individual servings for you and your loved ones to have.

What to Add on Slices of Your Blueberry Loaf Cake

While you do not need to add anything to your Blueberry Cream Cheese Loaf, you do have options. You can slice a piece of the loaf while it is still warm and spread some butter or margarine on top of it. 

The butter will melt within seconds, leaving the loaf moist and even more flavorful. You might also want to drizzle a bit of maple syrup or your favorite syrup on top to add an even sweeter touch to the loaf.

How to Store Your Blueberry Cream Cheese Loaf

Remove your Blueberry Cake from the baking pan, slice it into individual serving pieces, and wrap each piece with plastic wrap. Make sure to seal the plastic wrap shut with a piece of plastic. 

Put your loaf slices into a large plastic container or a large food storage bag and put it in the fridge. You can eat the loaf slices cold or heat them in the microwave for a few seconds to enjoy them warm. When stored properly in the refrigerator, you can keep the loaf slices fresh for up to five days.

Extra Ingredients You Can Add to the Blueberry Cake

Although the blueberry loaf tastes great just the way it is, you might want to add in a few extras to give it that special touch. Mini chocolate chip morsels are a great addition because they taste great with cream cheese, blueberries, and the added touch of lemon. 

If you want to add a bit of a crunch to your loaf, consider using chopped pecans, walnuts, or peanuts. You can sprinkle them into the bowl when folding your cream cheese into the flour mixture.

Can You Add Frosting to It?

You can add frosting to your Blueberry Cream Cheese Loaf. You can make frosting from scratch by combining powdered sugar with milk, lemon juice, and a pinch of vanilla extract. Combine these ingredients and then drizzle over the top of your freshly baked loaf while it is still warm. 

You can put the loaf in the fridge for a few minutes to allow the frosting to cool on top, creating a slightly crunchy and completely sweet touch to the loaf. If you do not want to use lemon frosting, use all the other ingredients without adding the lemon juice to create a vanilla frosting.

Ingredients
  

  • 1/2 cup unsalted butter
  • 1 cup white sugar
  • 2 large eggs lightly beaten
  • ⅓ cup whole milk
  • 2 teaspoons pure vanilla extract
  • Juice of 1 medium lemon
  • zest of 2 large lemons
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries
  • 1 cup cream cheese

Instructions

  • Preheat the oven to 350 F / 176 C and grease a 9×5 inch loaf pan.
  • In a medium bowl, mix butter and sugar until light and fluffy like a frosting. Now add eggs, milk, vanilla, lemon juice and lemon zest. Combine until evenly incorporated and smooth.
  • In a large bowl, combine flour, baking powder, baking soda and salt. Make a well in the middle and pour wet ingredients in the bowl. Mix but don’t over mix.
  • Gently fold in blueberries and cream cheese. Pour batter in loaf pan.
  • Bake in the middle of the oven for 60 to 70 minutes or just until a skewer comes out clean. Cool loaf for 20 minutes in the pan before removing from the mold.

    Can I use frozen blueberries instead of fresh? We have blueberry bushes and end up freezing them (we have 10 qt sized bags full saved for winter treats!)
    This recipe is wonderful for a breakfast treat, a snack in the afternoon or to bake for friends!

    This bread is delicious! I made a simple glaze with the zest and juice of 1 lemon and some confectioners sugar. My husband absolutely loved it! Note: batter reaches the top of the loaf pan!
