If you love a rich, creamy pasta that feels restaurant-worthy but comes together right in your own kitchen, this Creamy Bacon Carbonara with Chicken is going to be your new obsession. It has everything you want in a comfort meal: silky sauce, crispy bacon, tender chicken, and perfectly coated pasta that hugs every bite.
This is the kind of dish that looks impressive enough for guests but is easy enough for a weeknight dinner. The combination of eggs, cream, and freshly grated Parmesan creates that velvety carbonara-style sauce, while the rotisserie chicken keeps it simple and satisfying. And let’s be honest, bacon makes everything better. One bite and you’ll understand why this recipe never lasts long on the table.
Why You Will Love This Recipe
This carbonara is pure comfort in a bowl, and here is exactly why it works so well: It is rich and creamy without being overly complicated. The egg and cream mixture creates a smooth, glossy sauce that feels indulgent but is surprisingly easy to make. It uses rotisserie chicken. That means less prep, less cooking time, and more flavor.
The bacon adds crunch and depth. Crispy bacon crumbles bring texture and that smoky, savory flavor that makes carbonara so irresistible. It feels fancy but is weeknight-friendly. You can have this on the table in about 30 minutes. It is customizable. Add mushrooms, extra bacon, more Parmesan, or even a little extra cream if you like it extra saucy.
If you love creamy pasta dishes like Alfredo but want something with more texture and depth, this is the perfect in-between.
Ingredient Breakdown
Pasta
Use your favorite pasta shape. Spaghetti, fettuccine, or even penne all work beautifully. The key is cooking it just to al dente so it holds up in the sauce.
Fresh Parsley
Adds brightness and a fresh finish. If using dried flakes, reduce slightly since dried herbs are more concentrated.
Rotisserie Chicken
Using pre-cooked rotisserie chicken keeps this recipe quick and flavorful. Tender, juicy pieces blend perfectly with the creamy sauce.
Cream or Heavy Whipping Cream
This creates the base of the sauce and gives it that silky texture. Heavy cream will make it richer, while regular cream keeps it slightly lighter.
Freshly Grated Parmesan Cheese
Freshly grated is important. It melts smoother and gives better flavor than pre-shredded varieties.
Olive Oil
Helps bind the sauce ingredients and adds subtle richness.
Salt
Enhances all the flavors. Be mindful since bacon and Parmesan are already salty.
Eggs
The eggs are essential for true carbonara texture. When mixed with the hot pasta, they create that creamy, glossy coating.
Bacon
Crispy bacon is the star here. Half a pound gives you a generous amount, but you can absolutely add more.
Onion
Finely chopped onion adds sweetness and depth to balance the richness.
Mushrooms (Optional)
They add an earthy flavor and extra texture. Completely optional but highly recommended if you love mushrooms.
Frequently Asked Questions
Is this traditional carbonara?
Traditional Italian carbonara does not use cream or chicken. This is a creamy, American-style twist that combines classic carbonara elements with added protein and richness.
Will the eggs scramble?
They should not if you follow the instructions. The key is adding the egg mixture to hot pasta off direct high heat and stirring gently over low heat. The residual heat cooks the eggs into a smooth sauce.
Can I skip the cream?
You can reduce or skip the cream for a more traditional style, but the texture will be slightly less rich. If skipping cream, add a splash of reserved pasta water to help emulsify the sauce.
What pasta works best?
Spaghetti and fettuccine are classic choices. However, penne or linguine also hold the sauce beautifully.
Can I make this ahead of time?
Carbonara is best served fresh. If reheating, do so gently over low heat and add a splash of cream or milk to loosen the sauce.
Can I use leftover grilled chicken?
Absolutely. Any cooked chicken works well in this recipe.
How do I prevent the sauce from becoming dry?
Reserve a small amount of pasta water before draining. If the sauce tightens too much, add a tablespoon or two of the warm pasta water to loosen it.
Can I add vegetables?
Yes. Peas, spinach, or even sun-dried tomatoes would work well here.
Final Thoughts

A Quick Note About the Photos
If you’ve been around here for a while, you may notice that some of my recipes include a mix of newer photos and a few older ones. I love updating posts as my photography and kitchen setup continue to grow and evolve, but sometimes I keep a few of the original images on purpose. Some of these recipes have been reader favorites for years. Those original photos are part of their story. They’ve been pinned, shared, saved, and made in thousands of kitchens. In some cases, they also show helpful angles or details that I still think are useful for you.
My goal is always to make the recipe clear, approachable, and easy to follow. Whether a photo was taken last week or a few years ago, if it helps you see the texture, consistency, or final result better, it earns its place.
