What types of pork chops will I need for this recipe?

When preparing this simple recipe, itโ€™s best to use boneless center-cut pork chops that are about one-inch thick. If you want to use thinner pork chops, you can do that. You can also use different cuts or even use bone-in chops. However, Iโ€™d suggest using boneless because theyโ€™re easier to work with and then you donโ€™t have to worry about biting into a bone when eating your chops.

What should I do if I donโ€™t have beef stock?

If you donโ€™t have beef stock, you can combine a beef bouillon cube with water, mix together, and use that as your broth for this dish. You can also use chicken stock as a replacement if you have that and donโ€™t have the beef stock available.

Can I skip the cheese?

  1. Use a meat thermometer to check the internal temperature of your pork chops before you remove them from the skillet. The internal temperature should be at 160 degrees F before you serve your meat.
  2. If youโ€™re not the biggest fan of pork chops, you can prepare this exact meal using the boneless, skinless chicken breast as a replacement for the pork chops.
  3. Feel free to add additional spices when seasoning your pork chops, such as a bit of garlic powder or some cayenne pepper if youโ€™d like to add a slight kick to the chops.

How to Store Leftovers

Fridge:  Once youโ€™re done preparing your pork chops, cover and store them in the fridge if they wonโ€™t be eaten within two days.

Freezer: If you have leftovers and want to save them for later, place them in a freezer-safe container or bag and store them in the freezer for up to three months.

Microwave: Place your pork chops on a plate and heat them up in the microwave for one to two minutes or until theyโ€™re warmed all the way through.

Ingredients
  

  • 4 boneless center-cut pork chops 1-inch thick
  • Olive oil for frying
  • 1 cup caramelized onions
  • 1 cup beef stock
  • 4 tsp whole-grain dijon mustard
  • 4 slices provolone cheese
  • ยผ tsp dried thyme
  • 1/2 tsp salt optional
  • 1/4 tsp pepper

Instructions

  • Preheat oven to 350 degrees.
  • In an oven proof skillet, heat oil over medium high heat.
  • Season porkchops.
  • Sear the chops on both sides in the skillet. Remove from the pan and set aside.
  • In the skillet, add the stock and thyme.
  • Add the caramelized onions and simmer for 3-5 minutes for all the flavors to melt together well.
  • Meanwhile, spread each pork chop with 1 tsp of mustard on top and then place the meat into the onion sauce.
  • Place the skillet into the oven for 20 โ€“ 25 minutes until the pork chops read 160 Fahrenheit.
  • Remove the frying pan from the oven and carefully add the cheese to the top of each pork chop.
  • The skillet goes back into the oven for about 5 minutes until the cheese melts and lightly browns.
